Even if you don't stick to a particular nutritional system, you are completely free to choose recipes that relate to any of them - raw, vegetarian or vegan. Raw foods are versatile and can be varied and nutritious. The easiest way to verify this is with the example of desserts: few people are willing to argue with the fact that honey, nuts and dried fruits are tasty and healthy.

Raspberry cashew pie

Raw cheesecake analogues are very easy to prepare. These desserts usually have two parts, a base and a filling, but you can get creative and experiment. For example, increase the number of layers, make a base of different nuts or even carrots, add your favorite spices, berries, fruits and dried fruits, try different toppings. The result will definitely please if you focus on your taste and preferences. The recipe is designed for a mold with a diameter of 18 cm.

For filling:

1½ cups raw cashews (soak in water for at least 5 hours)

juice of 2 lemons

seeds of 1 vanilla pod

60 ml coconut oil, melted

60 ml honey or agave extract to taste

a glass of raspberries

For the basics:

½ cup raw almonds

6 pcs. royal dates

¼ h. L. sea ​​salt

Preparation:

Line the baking sheet with baking paper or cling film. Grind dates, almonds and salt in a food processor: the mass should be homogeneous and quite sticky - you can check it by rolling a small ball in your hands. Place the nut-date mixture in a mold, tamp well and level the surface. Grind and stir the cashews, lemon juice, vanilla, coconut oil and honey in a food processor until smooth. Pour about two-thirds of the mixture into the mold. Add raspberries to the remaining mixture, chop and mix thoroughly again. Pour the mixture over the first layer of the filling and place the dessert in the refrigerator or freezer until it solidifies. Remove the pie from the refrigerator half an hour before serving and cut with a knife heated under hot water.

Twix-style candy

In addition to the popular coconut candies or basic candies made from a mixture of dried fruits and nuts, there are all kinds of layered sweets. Based on the same recipe, you can get sweets, and bars, and mini-cakes - it all depends on the thickness of the layers and the size of the pieces into which the blank is cut.

For cookies:

½ cup coconut flour

½ cup almond flour

60 ml maple syrup

a pinch of salt

For caramel:

6-8 pitted dates

¼ cups peanut butter

3 tbsp. l. water

a pinch of salt

2 tbsp. l. coconut oil

For glaze:

80 ml coconut oil, melted

¼ glasses of cocoa powder

60 ml maple syrup

1 tsp vanilla extract

Preparation:

Cover the form with baking paper or cling film - it is better to choose a rectangular form. Mix all the cookie ingredients together; the mixture should be crumbly, slightly damp and keep its shape. If it is not moist enough, add more coconut oil or water. Put the mixture into a mold and place in the freezer. Soak dates in warm water for 10 minutes. Mix all the caramel ingredients using date water. Apply the mixture evenly to the biscuit layer and place in the freezer for a couple of hours until completely solidified.

For the glaze, mix all ingredients until smooth. Remove the blank from the freezer, cut into pieces of the desired size, cover with glaze and put in the freezer to freeze. Store in the freezer.

Chocolate-coated peanut cookies

From the previous recipes, it is clear that most raw food desserts are prepared in about the same way: a mixture of chopped dried fruits, nuts and additives is placed in the refrigerator or freezer to harden and retain its shape. Single-layer sweets are similar to cookies, and there are a lot of cooking methods: you can try ginger, mint or pumpkin, or you can come up with a recipe yourself, because it is almost impossible to make a mistake.

For cookies:

1 cup oatmeal

1½ cups grated coconut

½ cup ground flax seeds

¾ glasses of raisins

⅛ h. L. sea ​​salt

¼ cups peanut butter

For chocolate glaze:

120 ml coconut oil, melted

¾ glasses of cocoa powder

60 ml cup maple syrup

⅛ h. L. salt

Preparation:

Grind oatmeal, flaxseed, coconut and salt into flour in a blender. Add the raisins and chop again to create a slightly moist mixture that will hold its shape. Roll out the mass and, having achieved a layer of the desired thickness, cut into pieces of the desired size. Put in the refrigerator or freezer until it solidifies.

Stir all the icing ingredients until smooth. Spread some peanut butter on each cookie and dip each in the icing. Place in the freezer until the glaze hardens. Store the finished cookies in the refrigerator.

Salted nut brownies

Raw brownies are as tasty as classic brownies and can be easily whipped up. If you spend a little more time and redo the main recipe, you can get an amazing coffee cake (although raw foodists don't drink coffee). We offer a recipe for a multi-layered brownie-based cake, each layer of which can easily turn into a separate dessert.

For brownie:

1 cup walnuts

7-8 dates soaked in water overnight

1 tsp vanilla extract

FOR CHOCOLATE LAYER:

4 ripe avocados

¼ h. L. salt

2 tsp vanilla extract

60 ml agave syrup

2 tbsp. l. coconut oil

½ cup cocoa powder

nuts for sprinkling

FOR THE NUT LAYER:

7-8 dates soaked in water overnight

1 cup pecans

1 large banana

2 tbsp. l. agave syrup

1 tsp cinnamon

⅛ h. L. nutmeg

Preparation:

Mix all the ingredients for the brownie; the mixture should be crumbly and slightly damp. Pour the mixture into a lined dish with baking paper or plastic wrap. Grind all the ingredients for the nut layer in a blender until smooth. Spread the mixture onto the brownie layer.

Grind all the ingredients for the chocolate layer in a blender and gently distribute in a mold. Cover the dish with cling film and place in the freezer for 3-4 hours. Cut the cakes with a knife heated under hot water. Store in the freezer.

Lime and avocado ice cream

It’s hard to think of anything better than a magical banana and berry ice cream. However, we know another non-trivial avocado-based recipe that can be customized by changing the amount of ingredients used and adding new ones to taste.

120 ml fresh lime juice

180 ml agave syrup

Preparation:
