HOT SANDWICHES - ONE OF THE FASTEST AND LONGEST DISHES known to mankind, which we all prepare not even necessarily only when we are busy. It's also a great way to recycle leftovers from a wide variety of foods waiting in the fridge. Often they are made closed: quick sandwiches are convenient to eat, without looking up from business and without getting your hands dirty. The classic recipe for a microwave-heated sandwich with sausage, cheese and ketchup is probably familiar to everyone. We offer less desperate, but more useful options for warm sandwiches in a hurry.

Mushroom and eggplant sandwiches

INGREDIENTS:

4 slices whole grain bread

1 small clove of garlic

2 tbsp. l. mayonnaise

1/2 tsp lemon juice

1 small eggplant

2 portobello mushroom caps

1 small tomato

olive oil

arugula or spinach

pepper

salt

COOKING:

In a small bowl, combine chopped garlic, mayonnaise, and lemon juice. Cut the eggplant into slices.

Sprinkle mushrooms and eggplants with salt and pepper and fry in olive oil until soft and golden brown.

Cool the mushrooms slightly and then cut into slices.

Toast the bread in a toaster.

Place the garlic sauce, eggplant, mushrooms, arugula, and the tomato slices in turn on the bread. Cover with the remaining slices of bread.

Cut the remaining onion into half rings and fry until dark brown.

Melt the butter in a skillet. A non-greasy surface can also be used.

Cut the banana into slices. In a small bowl, combine the peanut butter, honey, and cinnamon. Spread the mixture over two slices of bread, top with the banana slices and cover with the remaining bread.

Fry the sandwiches on both sides until golden brown over medium heat, sprinkle with cinnamon and cut diagonally. Sandwiches can be sprinkled with icing sugar or served with honey.

Bruschetta with squid

INGREDIENTS:

4 thick slices of bread

2 squid

1 chili pepper

1 large clove of garlic

2 tbsp. l. olive oil

4 cherry tomatoes

½ lemon

COOKING:

Fry the bread in a skillet without oil until golden brown.

Defrost the squid, dry thoroughly with napkins and cut into 2x3 cm pieces.

Finely chop the chili peppers, garlic, grate the zest of half a lemon and cut the tomatoes into rings.Toss squid, pepper, garlic and lemon zest in a separate bowl and add olive oil.

Transfer the mixture to a preheated skillet and sauté over medium heat for 2-3 minutes until the squid is tender. It is important not to overexpose: they can become too hard.

Place tomato rings and squid on the bread. Season with salt and pepper to taste and serve immediately.
