- Apple jam - 200 ml
- Sugar - 50 g

Step by step preparation of biscuit roll with jam, recipe with photo:
1. Separate the yolks from the whites. Make sure that not a single drop of yolk gets to the whites, otherwise they will not beat up to the desired consistency.
2. Add sugar to the yolks and beat with a mixer until an airy white mass of lemon color.
3. Add a pinch of salt to the whites and beat with clean dry whisks until fluffy, airy peaks and a white tender mass.
4. Add the whites to the yolks and stir slowly so that they do not settle, but a homogeneous mass is obtained.
5. Add flour, sift through a fine sieve. It will be enriched with oxygen and gain airiness, which will make the baked goods more tender.
6. Add baking soda and use a mixer to knead the dough until smooth. Run it at a slow speed so as not to break the structure of the whipped proteins.
7. Cover the baking sheet with parchment, grease with butter or vegetable oil and pour out the dough. Spread it in an even rectangular layer no more than 1 cm thick.
8. Send the cake to a heated oven up to 180 degrees for 10-15 minutes. Check readiness with a wooden stick. It should be easy to enter, while no sticking of the dough remains.
9. Remove the hot cake from the parchment and roll it up. Wrap it in parchment, towel on top and leave to cool completely.
10. Then unfold the cold cake.
11. Apply apple jam immediately and sprinkle with cinnamon powder.
12. Roll it back into a roll and secure with cling film. Refrigerate for 1-1.5 hours to soak. After this time, remove the bag from the biscuit roll with jam, sprinkle it with cocoa powder or other sprinkles and serve for tea.
