Homemade crispy, crumbly and tender sandy roll. Absolutely everyone loves him, especially children. There are several recipes for shortbread dough. Some housewives use eggs for baking, others use sour cream, and some use only butter or margarine. There are also a huge number of fillings, from fresh fruits to minced meat. That is, such rolls can be with both sweet and salty filling. For those with a sweet tooth, I suggest baking a delicious dessert - a shortcrust roll with pear jam.
Perhaps such a filling will seem ordinary, but each baking has its own flavor. By combining the simplest products and aromatic filling, you can sometimes get a delicious roll of the most delicate dough that will melt in your mouth. Although you can use a wide variety of fillings for these baked goods if you wish. If you have multiple rolls, make them with different fillings. If you wish, you can decorate the finished roll. For decoration, use icing sugar, chocolate or colored icing, cream and other dressings.

Ingredients:
- Margarine - 100 g
- Baking soda - 0.5 tsp
- Salt - a pinch
- Pear jam - 300 g
- Flour - 400 g
- Sugar - 50 g or to taste
- Sour cream - 100 ml
- Ground cinnamon - 1 tsp
Step-by-step preparation of shortcrust pastry roll with pear jam, recipe with photo:
1. Cut the margarine at room temperature into medium-sized pieces and lower it into a food processor, into which place the cutter attachment.
2. Add sour cream to the food processor.
3. Next, pour in flour, which sift through a fine sieve so that it is enriched with oxygen. Also add sugar and baking soda.
4. Knead an elastic and soft dough so that it does not stick to the sides of the crockery. If you knead the dough with your hands, do it quickly. Because shortbread dough doesn't like heat. To do this, cut the butter into smaller pieces or grate.
5. Form the dough into a lump, wrap with cling film and refrigerate for half an hour or freezer for 15 minutes.
6. Then roll out the dough thinly about 3-4 mm in a rectangular shape.
7. Apply pear jam to the dough and roll it up.
8. Make shallow cuts with a sharp knife at a distance of 1, 5-2 cm from each other. Optionally, grease the roll with egg yolk or butter so that it has a golden hue.
9. Heat the oven to 180 degrees and send a shortcrust roll with pear jam to bake for 30-40 minutes. When it acquires a golden hue, remove the roll from the oven. While it is hot and soft, cut it into portions where the cuts were made and dust with powdered sugar if desired. It can be consumed both warm and chilled.
