This is a real tasty treat with a pleasant delicate structure, which is achieved by mixing liquid and dry ingredients separately. Then they connect without whipping. Thus, some of the lumps are retained in the dough, which gives a consistently excellent result, and some piquancy to baked goods. The technology for making cupcakes is simple and does not take much time.

Nutella Chocolate Spread is used to make these small round buns. But if you don't have it, replace it with chocolate butter mass. To do this, melt 2/3 of the chocolate and 1/3 of the butter in water manna, mix until smooth and leave to harden until a viscous consistency.

  • Kefir or sour milk - 150 g
  • Flour - 300 g
  • Vegetable oil - 2 tablespoons
  • Chocolate paste
  • Baking soda - 0.5 tsp
  • Eggs - 1 pc.
  • Sugar - 50 g or to taste
  • Salt - a pinch
  • Nutella - 100 g

1. This recipe uses sour milk. But also the dough can be made with kefir. It is important that the food is at room temperature. So, pour kefir into a mixing bowl, add baking soda and stir. If the fermented milk products are at a warm temperature, then the kefir will immediately begin to foam and air bubbles will appear on the surface. If it is cool, then there will be no correct reaction.

2. Add eggs and vegetable oil. These products should also be at room temperature so as not to cool the kefir. Otherwise, the baking soda will stop working and the cupcakes will not rise during baking. Therefore, remove the eggs from the refrigerator in advance so that they have time to heat up to the desired temperature.

If you like more sandy and crumbly muffins, add more vegetable, or preferably butter, to the dough and put less kefir.

3. Stir the food well with a whisk or mixer at moderate speed until smooth.

4. Sift the flour through a fine sieve so that it is enriched with oxygen, which will make the baked goods more tender and airy. Then combine it with sugar, salt and stir. Add dry mixture to liquid ingredients.

5. Knead the dough with a whisk or mixer until a uniform, smooth and elastic consistency, which should resemble the texture of thick sour cream.

6. Lubricate muffin tins with a vegetable layer if using iron. Silicone containers do not require lubrication and baked goods do not stick to them. Place a small portion of the dough in each mold, about 1.5-2 tbsp.

7. Put a teaspoon of Nutella chocolate paste or any other filling of your choice in each muffin.

8. Pour the filling over with another layer of dough. The muffin mold should be 2/3 full of the total volume. Because the cupcakes will rise and expand during baking.

By this time, heat the oven to 180 degrees and send the muffins to bake on kefir with chocolate filling for 15 minutes until golden brown.
