Ingredients:
- Kefir - 250 ml
- Salt - a pinch
- Vegetable oil - 1 tbsp. in dough, plus for frying
- Flour - 250 g
- Eggs - 1 pc.
- Baking soda - 0.5 tsp
- Chocolate Nutella - 100 g
Step-by-step preparation of kefir pancakes stuffed with chocolate nutella, recipe with photo:
1. Pour room temperature kefir into a bowl and add baking soda. The soda added to the dough will raise the pancakes and make them fluffy. Without soda, kefir pancakes will also work, but they will not be so loose and airy. Soda can be replaced in whole or in part with baking powder.
2. Stir well with a whisk so that the kefir begins to foam. Use kefir only at room temperature, not cold. Only then will it enter into the correct reaction with the fermented milk environment, and the texture of the pancakes will turn out as it should.
3. Add eggs to kefir. They should also be at room temperature so as not to cool the kefir temperature. Therefore, remove them from the refrigerator in advance so that they have time to heat up.
4. Whisk the kefir with the egg until smooth.
5. Pour a little odorless vegetable refined oil into the dough and stir in until it is completely dissolved until smooth.
6. Pour flour into the liquid component, which is best sifted through a fine sieve. So the pancakes will be softer and more magnificent. Basically, pancakes are made from wheat flour, but you can make a mixture and add oatmeal, buckwheat, rye, corn to it.
7. Whisk the dough well until smooth and homogeneous, so that there are no lumps. You can use a blender for this, it breaks lumps well and makes the dough smooth. In terms of thickness, the dough should be similar to thick sour cream, and should not spread in the pan. But if you put a little less flour in the dough, the pancakes will be thinner, while less high in calories, but will remain just as tasty and tender.
Season the finished dough with salt and stir.
After kneading the dough, leave to stand for a while at room temperature for 15-30 minutes. Do not leave kitchen utensils in it: a spoon or a ladle. And when it stands, do not stir it anymore, because this affects the splendor of the pancakes.
8. Place a cast-iron or thick-bottomed pan on the stove and heat well. With a culinary brush, brush the bottom with a thin layer of butter and spoon out the dough with a tablespoon, shaping the pancakes into a round or oval shape.
9. Immediately on each pancake, on the still batter, put a teaspoon of Nutella chocolate paste. But you can use any product for the filling, for example, a piece of chocolate, chocolate drops, pieces of fruits and berries, etc.
10. Spoon some dough on top of the filling with a spoon so that the chocolate mass is completely covered.
11. Fry the pancakes in a skillet over medium heat until golden brown, about 3-5 minutes. Heating should be medium, otherwise the products will burn or take a long time to cook, from which they will absorb a lot of oil.
As soon as they are reddened from below, and holes appear on top, you can turn them over with a spatula to the opposite side. Fry them on the other side for 2-3 minutes until tender. Fritters cooked in kefir always rise well, turn out to be tender and airy.
They are best consumed freshly prepared. Serve kefir pancakes stuffed with chocolate nutella with cocoa, coffee, milk, tea. Such cakes do not need additional toppings, because in the middle contain a delicious filling.
