Chicken and mushrooms are one of the most successful combinations, and in any culinary performance. You will hardly find people who do not like mushrooms, but chicken is generally the most popular product in our country. Its meat is not only tasty, but also healthy. It is easily absorbed by our body, which does not overload the stomach. Mushrooms have gained their popularity so widely that today they are grown in specialized mushroom factories and farms. Thanks to this, you can feast on them at any time of the year. In addition, dried forest mushrooms are no less popular, of which all varieties are commercially available. So, mushrooms have already become available today not only year-round, but in any form.

Today I propose to combine these two popular products in one dish and make a hearty and delicious soup from them. The recipes for such soups are very diverse, so housewives can show culinary imagination and talents, creating true masterpieces. But, as in any business, there are subtleties here. The most aromatic and rich soup is obtained from dried porcini mushrooms or aspen mushrooms. But they should first be poured with boiled water, and only then thrown into the soup. Fresh mushrooms give their wealth to the broth immediately. To do this, they are pre-fried in oil in a pan. There are also soups with pickled or salted mushrooms. Such a first course always has an individual taste, because mushrooms are complemented by the flavor of the marinade. But the most important secret of mushroom soups is that mushrooms should be boiled in moderation, because if you digest them, they will lose all taste and aroma.

Ingredients:

  • Chicken wings - 2-3 pcs.
  • Dry porcini mushrooms - 15 g
  • White cabbage - 200 g
  • Potatoes - 1 pc. (big size)
  • Onions - 1 pc.
  • Tomato - 1 pc.
  • Bay leaf - 2 pcs.
  • Peppercorns - 3-4 pcs.
  • Salt - 1 tbsp or to taste
  • Ground black pepper - 1/3 tsp or to taste

1. Wash the chicken wings, remove the non-plucked feathers, cut the phalanges into 2-3 pieces and put them in a saucepan. Add to them the peeled onion, bay leaf and allspice peas.

2. Place the mushrooms in a plate and pour boiling water over them. Leave to infuse for 20 minutes.

3. Prepare all vegetables. Peel the potatoes, wash and cut into cubes. Remove the top leaves from the cabbage head. they are always dirty. Cut off the desired part from it, which chop finely. Wash the tomato and cut into any large shape: cubes, slices.

4. After 20 minutes of boiling the broth, add the potatoes to the pot.

5. Remove the mushrooms from the water, rinse and cut into strips.

6. Send the mushrooms to the broth.

7. When the potatoes are half cooked, put the cabbage in a saucepan, and immediately remove the onion. If you wish, you can not cook the onion, as I do, but make onion frying. This is already a matter of taste.

8. Boil the cabbage for 5-7 minutes and add the tomatoes.

9. Season the dish with salt, pepper and cook the soup until all ingredients are cooked through. If desired, at the end of cooking, squeeze a couple of garlic cloves into a saucepan.

10. Put the prepared soup in deep bowls and serve to the table, and if you wish, you can add sour cream and herbs to each eater. You can also experiment with this soup by adding different products: processed cheese, noodles, cereals, bacon, ham, meatballs, dumplings, dumplings.
