It's all about an interesting and organic combination of soft and crunchy ingredients, as well as a combination of different tastes - spicy, sour, salty.
To make a Christmas salad based on Olivier as tasty as possible, all vegetables, meat component and eggs should be cut into the same shape - a cube, and the size of this cube should not be larger than a pea. Some chefs recommend using not only mayonnaise for dressing, but its mixture with sour cream. So the finished dish will become less high-calorie and more useful. It is noteworthy that a large amount of mayonnaise can hide the taste of each ingredient, so do not add too much of it.

- Fillet - 500 g
- Eggs - 4 pcs.

- Mustard - 1-2 tablespoons

Step-by-step preparation of Olivier-based Christmas salad
1. To prepare salad based on Olivier, we prepare the necessary products. Boil the chicken fillet in salted water with the addition of bay leaves, remove from the broth and cool. Boil the potatoes in their uniforms until tender, cool and peel. Cook the eggs hard-boiled, place them in cold water, and then peel them. Separate the white from 3 eggs and set aside for decoration. Grind all three ingredients with a knife in the form of small cubes.
2. Next, for a Christmas salad based on Olivier, grind the pickled cucumber, put it in a colander so that the excess liquid is glass. After a few minutes, along with canned green peas, we send them to a container with chicken fillets, potatoes and eggs.
3. Top with mustard and mayonnaise. Mix all ingredients until evenly distributed. If the potatoes lose their juiciness during cooking, then a little more mayonnaise may be required, but the mass should hold its shape well.
4. For Olivier-based Christmas salad, choose a flat, square dish. On it we lay out the salad blank in the shape of a square in an even layer.
5. Rub the remaining egg whites on a fine grater, divide into 2 parts. We paint one part blue or blue using food coloring. It can be replaced with fresh purple cabbage juice.
