Mocha is both a specially processed Arabica variety and the name of a coffee drink. Mocha recipes are varied. But the main feature is the use of three main components: coffee, milk, chocolate. The combination of products gives the drink a unique taste, even if it is made from ordinary Arabica. But nevertheless, it will not hurt to know some of the subtleties of cooking.
- It is better to use Arabica coffee beans for making mocha coffee, although this is not essential. It is important that the coffee is of high quality, aromatic, and, of course, natural. A beverage made from instant powder will not exude a rich aroma like brewed natural coffee.
- It is better to store coffee mainly in beans in order to better preserve the esters that give the characteristic aroma.
- If coffee is brewed in a Turk, then strain it before mixing with other ingredients so that no ground beans get into the drink.
- The perfect mocha is with a layered structure. But you can mix all the products into one total mass.
- As for the type of chocolate, both black and milk chocolate are added to the mocha.
- Coffee is served classically in an irish glass - it is a glass transparent cup on a leg with a handle.
- Garnish with cinnamon or grated chocolate before serving.

Ingredients:
- Ground coffee - 1 tsp.
- Dark chocolate - 30 g
- Drinking water - 60 ml
- Milk - 60 ml
Step by step preparation of mocha coffee, recipe with photo:
1. Brew an espresso coffee any way you like. I do it in Turk, but you can use a coffee machine. So, put ground coffee in a Turk. It is advisable to grind the coffee beans just before preparing the drink.
2. Fill the coffee with drinking water.
3. Place the turkey on the stove with medium heat. Bring to a boil and remove from heat. Watch the boiling process carefully, as soon as you see an airy foam on the surface of the turk, which quickly rises up, immediately remove the turk from the fire. Repeat the boiling process 2 more times at 1 minute intervals.
4. Put the broken pieces of chocolate into the glass for serving the drink and melt it in a convenient way. I do this in the microwave. At the same time, make sure that the chocolate does not boil, otherwise it will acquire a bitter taste, from which it will be impossible to get rid of. If there is no microwave oven, then melt the chocolate in a water bath. Making a water bath is simple. Pour water into a saucepan, place a colander on it so that it does not come into contact with boiling water. Put a bowl of chocolate in it and close the container with a lid.
5. Pour milk into a glass of melted chocolate.
6. Place the glass in the microwave and heat the milk, or immediately pour the pre-warm milk into the glass.
7. Stir milk and chocolate until smooth. Then pour the brewed coffee through a fine sieve to prevent coffee beans from entering the glass. Taste mocha and add sugar to taste if desired.
