Beetroot is a brother in one person of borscht and okroshka. From borscht, he took a bright, beautiful burgundy color and a set of vegetables, and from okroshka the same vegetables and cold serving. At the same time, the chiller turns out to be no less rich and satisfying than its brothers. To prepare this dish, you do not need special skills and a lot of time, since the products used are quite quickly and easily prepared. It is better to serve it after a while, and best of all the next day, then it becomes much tastier.

The basic set of fridge products is beets, fresh cucumbers and herbs. But today it is customary to supplement it with potatoes, eggs, onions, carrots and meat. Soup is prepared on beet or beet-carrot broth, supplemented with water, kvass, kefir, meat broth and even mineral water. Beets are usually boiled peeled, either whole or immediately cut into pieces. Boil potatoes and carrots in their uniforms, then cool and cut. Also, carrots can be sautéed with onions. Cucumbers are cut into cubes or strips, there are still options where they are grated. Old cucumbers will need to be skinned.

  • Sour cream - 500 ml
  • Table vinegar 9% - 1 tablespoon
  • Salt - 1 tsp or to taste

1. Peel the beets, cut into cubes, put in a saucepan, cover with water, add vinegar and cook until cooked for about 1-1.5 hours. Vinegar is necessary for the beetroot to have a rich burgundy color. You can replace it with lemon juice. I do not recommend using beetroot, it will not give a bright, beautiful color; Bordeaux root vegetable varieties are best suited. At the same time, the most delicious cold chill is obtained from young fruits.

2. Boil the potatoes in their uniforms, cool, peel and cut into cubes.

3. Boil the eggs hard-boiled for about 10 minutes, put them under cold water to cool, peel and cut into cubes.

4. Cut smoked meat into small pieces. Any products are suitable as smoked meats: chicken leg, breast, balyk and other products. You can also use any sausages.

7. Put all the food together with the sour cream in a saucepan of a suitable size. For a given amount of ingredients, a 4, 5 liter dish is suitable.

8. Fill everything with beet broth, if necessary add liquid - pour drinking water. Season the food with salt, mix well and send to the refrigerator to infuse.
