Okroshka is a traditional summer dish. And whatever they call it: both liquid soup and an unusual salad … And how many ways of cooking there are, just countless. Today we will focus on the recipe for okroshka with chicken on sour cream and water. For seeming lightness, this refreshing dietary meal is very satisfying and nutritious. But despite this, it is suitable for those who follow the figure or want to lose a few pounds. Okroshka is popular with the most fastidious gourmets. She goes for the first and the second at the same time.
Each housewife decides on her own what to put in the dish. Instead of boiled chicken, you can take smoked chicken breast, boiled-smoked meat, boiled offal, sausage or other types of meat. Some housewives advise mixing vegetables in the refrigerator with meat leftovers and pouring them with a liquid base. An easy version of the dish is on water or kvass, and for hearty okroshka it is better to take kefir. After all, there is no basic recipe for okroshka. Therefore, each housewife can make this traditional Slavic dish according to her own proven technology. However, if you have once cooked an Olivier salad, then there will be no difficulties with a traditional summer soup.

Ingredients:
- Potatoes - 4 pcs.
- Cucumbers - 3 pcs.
- Salt - 1 tsp or to taste
- Mineral or plain water - 2.5 ml
- Green onions - bunch Dill - bunch
- Eggs - 4 pcs.
- Mustard - 1 tablespoon
- Chicken thighs - 2 pcs.
- Citric acid - 1 tsp or to taste
- Sour cream - 400 ml
Step by step cooking okroshka with chicken in sour cream and water, recipe with photo:
Before starting cooking, boil the potatoes in their uniforms in salted water, hard-boiled eggs and chicken in advance. After that, cool the food well, because okroshka is used chilled, and only then proceed to cutting all the components.
1. Peel the boiled eggs and cut into cubes with sides of 5 mm. Remove the boiled chicken from the bones and chop finely.
2. Peel the potatoes and cut into small pieces.
3. Wash the cucumbers under running water, pat dry with a paper towel, cut off the ends and cut into cubes. Chop all food to the same size.
4. Wash green onions and chop finely.
5. Rinse the dill sprigs and chop them as well. Pour sour cream to the products and put a spoonful of mustard. Although the amount of mustard can be increased. Navigate to your liking.
6. Place all food in a large saucepan, season with mineral water, season with salt and citric acid and stir. Send the dish to the refrigerator to cool for half an hour. Serve cold food to the table with a fresh slice of bread.
