Barley is considered one of the healthiest cereals in the entire grocery line. However, barley grains (and this is essentially pearl barley) are rarely called a favorite cereal. Trying to correct such injustice, we propose to prepare a delicious dish that is prepared from this particular cereal: pearl barley porridge with chicken. Such a main course will satisfy your hunger for a long time - after all, it contains meat, vegetables and grains. We think that thanks to barley with chicken you will change your attitude towards this grain.

- Pearl barley - 1 tbsp. spoon
- Chicken leg - 1 pc.
- Carrots - 1 pc.
- Bulb onions - 1 pc.
- Salt, pepper, spices - to taste
Step by step preparation of barley porridge with chicken
1. We wash the pearl barley, which itself is very dirty, in several waters until the water is clear. Since barley is a porridge that takes a long time to cook, soak it for a couple of hours to shorten the cooking time. In the case of pearl barley, the phrase “the more, the better” does not quite work. If you leave the cereal in water overnight, the porridge will turn out to be viscous, slippery, grayish and completely unappetizing. Therefore, let us soak it for a couple of hours - no more.
2. Fry the carrots and onions to make the porridge more rich and full of flavors. Chop vegetables as you usually do, for example, for soup.
3. Cut the chicken meat from the bone and cut into small pieces.
4. Fry carrots with onions in vegetable oil. Let the vegetables brown a little.
5. Add meat to vegetables, if necessary, add vegetable oil or other fat, stir periodically and fry until the meat turns white. Add salt and spices. If you want the pieces of meat to be ruddy, golden-sided, then the chicken should be fried separately, and at the very end of cooking, combine with vegetables. So, neither onions nor carrots will burn and the dish will not taste bitter.
6. Pour the presoaked pearl barley to the chicken with vegetables.
7. Fill with water at the rate of 1 part of cereal to 1, 5 parts of water. Water will cover the barley with meat on a finger and a half. If necessary, add salt to the porridge. Bring the barley with chicken to a boil, boil for 5 minutes, cover and cook over low heat until tender.
8. At the end of cooking, when the water has evaporated, check the barley porridge for readiness, if it is still hard, you can add a little hot water and continue simmering. The porridge will be ready when the water boils away.
9. Serve the prepared chicken barley porridge with salted or fresh vegetables. Feed your family a hearty delicious lunch and bon appetit.
