Unlike herring, which is salted with a marinade, this one turns out to be more spicy, fatty and dry. It resembles a little dried fish, which makes the herring want to eat and eat. - Herring - 2 pcs.
- Bay leaf - 4 pcs.
- Allspice peas - 4-6 pcs.
- Ground black pepper - 0.25 tsp
- Salt - 2 tablespoons
- Sugar - 1 tsp
Step-by-step preparation of dry salted herring in a bag, recipe with photo:
1. For each herring we take separate packages so that it is well salted. If the carcass is frozen, then defrost it first. Rinse fresh under running water. If you want to shorten the salting time, you can cut the carcass into fillets and pieces. So, place the prepared fish in a clean bag.
2. Add salt and sugar to the fish.
3. Next, add bay leaves, allspice peas and black ground pepper. If desired, you can add a variety of herbs and spices: mustard, lemon juice, vinegar, onions …
4. Tie the bag and shake the herring well in your hands to distribute the salt evenly throughout the carcass. Send the fish to the refrigerator for 1-2 days. After this time, tear off the fin and taste it. If you are satisfied with the salting, remove the dry salted herring from the bag, wash it under running water and use it for cooking various dishes. If the fish is not salted enough, return it to the bag and continue salting for another 5-6 hours, then remove the sample again.
