Carrots and cabbage are quite frequent guests in our life. These vegetables are available all year round, are not expensive, and if you just cut them and season with oil, you get a completely edible salad. And if you supplement them with other products, you get a more delicious dish. In this case, I have pumpkin as an additional ingredient. This is a healthy vegetable that strengthens the immune system. And if you use it for several days in a row, then excess weight will go away very quickly.
Pumpkin for salads is used both raw and boiled. The first method is preferable when combined with other raw vegetables or fruits, as in this example recipe. And if it is included in the composition of meat salad, then first heat treatment should be carried out with it: bake or boil. However, this is such a versatile vegetable that there is no dish that cannot be cooked with. And even if there is, then not much at all. But in any case, salads with pumpkin are not a gimmick, because presented their dozen, or even more interesting recipes.
This vegetable salad is best consumed in the morning and lunchtime. The slow carbohydrates found in vegetables give the body energy. But even in the evening, a salad will be very useful, so as not to overload the body with heavy food. It is especially suitable for those who want to lose weight.

Ingredients:
- Peking cabbage - 7-8 leaves
- Carrots - 1 pc. (small size)
- Salt - pinch or to taste
- Vegetable oil - for dressing
- Pumpkin - 100 g
Step-by-step preparation of salad with Chinese cabbage, pumpkin and carrots, recipe with photo:
1. Peel and wash the carrots, cut them into thin and long strips with a sharp knife. If you wish, you can grate it on a coarse grater, then the taste will be softer.
2. Peel the pumpkin, peel the seeds with fibers and cut into the same thin strips as the carrots. This vegetable can also be grated if desired. And if it will be difficult to cut the peel from the pumpkin, then pre-soak it in the microwave for about 2-3 minutes. It will not have time to cook, but the skin will become softer and can be easily cut off.
3. Remove the leaves from the cabbage head. Wash them and pat dry with a paper towel.
4. Use a sharp knife to cut the cabbage into thin strips.
5. Place all vegetables in a bowl, season with a pinch of salt and add vegetable oil.
6. Stir the salad, soak in the refrigerator for 15 minutes and serve.
