Exotic, hearty, spicy Mexican cuisine has recently begun to open up to our compatriots. Since earlier it was possible to try the delicacies of the Mayan descendants only by visiting Mexico. Nowadays, Mexican dishes are very popular not only in Russian restaurants, they are cooked with pleasure by housewives in their kitchens. It is no coincidence that Mexican cuisine was included in the UNESCO World Heritage List.
The following can be said about this recipe, fajitos. The process of its preparation is not at all complicated, however, the result is simply amazing. There are so many interpretations of this recipe that it is difficult to say for sure about the combination of products. Any non-tough meat, fish or poultry is suitable for cooking fajitos. Mainly uses beef or chicken. To these are added vegetables like tomatoes, onions and bell peppers. Some Indian tribes added those vegetables that were grown: zucchini, beans, potatoes, corn.
All products used for the dish are cut into thin equal strips and fried in a wide, thick-bottomed pan. After that, they are seasoned with spices and immediately served wrapped in a flat cake, or simply in a hot pan, and a tortilla is placed next to it. Then each eater himself wraps the meat-and-vegetable filling in pita bread in the amount that he wishes. Fajitos are usually consumed with their hands and no cutlery is provided for this dish.

Ingredients:
- Chicken fillet - 2 pcs.
- Red sweet bell pepper - 1 pc.
- Hot pepper - 1 pod
- Garlic - 2-3 cloves
- Lemon - 0.5 pcs.
- Table vinegar 9% - 1 tablespoon
- Soy sauce - 2 tablespoons
- Refined vegetable oil - for frying and 2 tbsp. for sauce
- Salt - 0.5 tsp or to taste
- Ground black pepper - 1/4 tsp or to taste
Cooking Mexican Fajitos with Chicken
1. Wash the chicken fillet, pat dry with a paper towel and cut into thin strips.
2. Heat a frying pan with vegetable oil and fry the meat intensively over high heat, stirring it for about 5 minutes. It should acquire a light golden crust.
3. Wash the peppers (sweet Bulgarian and hot), remove the stem, stem, seeds and cut the pulp into thin strips. Peel the garlic and wash.
4. Add the peppers to the meat in the pan, stir and, without lowering the temperature, continue to fry for about 5 minutes.
5. In the meantime, prepare the sauce. Wash the lemon and squeeze the juice out of it.
6. Combine the following foods in one container: vegetable oil, vinegar, soy sauce, salt, ground pepper, finely chopped garlic.
7. Stir the sauce.
8. Fry the meat with peppers until golden brown and season the food with the prepared sauce.
9. Stir the food, fry it literally for 1-2 minutes and immediately serve the dish to the table.
