1. Wash the asparagus beans under running water. Boil water in a saucepan and lower the pods. Bring the water to a boil again and turn the heat on. Cook the asparagus uncovered for 5 minutes. Then tip it into a sieve to drain the water. Place it on a cotton towel and let it dry. After that, cut off the ends on both sides and cut the pods into 3-4 pieces of 2 cm each.
2. Drive eggs into a deep bowl, add salt and black pepper. Stir the egg mass until smooth.
3. Peel the onions, wash, dry with a paper towel and chop into thin quarter rings. Put the pan on the stove, add vegetable oil and heat well. Put the onion in a skillet and sauté it over medium heat until transparent.
4. Peel the bell pepper from the seed box, cut off the partitions and remove the stalk. Wash the fruits under running water and dry with a paper towel. Cut them into thin strips and send them to the pan with the onions. Stir and fry until golden brown.
5. Then add the asparagus beans to the vegetables, stir and fry all the vegetables together for 3 minutes. Pour the egg mass over the food.
7. Turn off the pan and stir the vegetables quickly so that the egg mass coagulates and envelops all the vegetables. Serve hot asparagus beans with bell peppers in an egg, although after cooling they will remain just as tasty.
