Although it is not difficult and very fast to prepare, the dishes with it are hearty and nutritious. Today I propose to prepare a delicious and hearty salad of asparagus beans, tomatoes and bell peppers. This dish exudes extraordinary freshness. It is full of juicy and elastic youth! It is worth noting the beautiful design of the food, because contrasting red tomatoes and green asparagus beans are harmonious and look great. The whole family will enjoy such a dish. A hearty and healthy salad can be an independent side dish or an appetizer to a hot side dish in the form of a meat or fish steak.
Asparagus beans for salad can be used not only fresh, but also frozen. Therefore, this delicious meal can be classified as an all-season treat. If this dish does not seem very satisfying on its own, then pieces of boiled meat or chicken, or boiled eggs or cheese can be added to the composition of the products. However, it is permissible to add all kinds of vegetables and other products in various proportions and combinations to the salad.

Ingredients:
- Asparagus beans - 250 g
- Cucumbers - 1 pc.
- Salt - 0.5 tsp or to taste
- Vegetable oil - for dressing
- Greens (cilantro, basil) - several sprigs
- Tomatoes - 1 pc.
- Sweet pepper - 1 pc.
Step-by-step preparation of salad from asparagus beans, tomatoes and sweet peppers, recipe with photo:
1. Choose asparagus beans that are young, not very long, dense and juicy. Wash it under running water, put it in a pot of water and after boiling, boil it for 5 minutes.
2. Tip the asparagus onto a strainer to drain the water and leave to cool. Cut off the ends on both sides and cut it into 2-3 pieces, depending on the original size.
If you use it frozen, then first defrost it without using a microwave and water. Leave the asparagus on the bottom shelf of the refrigerator.
3. Peel the bell peppers from the seeds and partitions that are inside. Cut off the stem, wash and dry with a paper towel. Cut the fruit into 5 mm strips.
4. Wash tomatoes, dry, cut into wedges or cubes.
5. Washed and dried cucumbers cut into thin half rings.
6. Finely chop the greens and put all the food in a deep bowl.
7. Season salad of asparagus beans, tomatoes and bell peppers with salt and vegetable oil. Stir and serve. It should be served immediately, until the tomatoes have let the juice flow.
