Every housewife is interested in a universal recipe for homemade pastries, according to which you can quickly prepare a delicious dessert without the hassle and time consuming. This recipe is honey cottage cheese muffins. You just need to mix all the ingredients with a mixer or a whisk, pour the dough into molds and send them to the oven. The cupcakes are soft, moist and very tender. The honey aroma is especially noticeable when the baked goods are still warm. The aroma decreases as it cools. Small raisins perfectly set off the sweetness of the dough. And thanks to the curd, the crumb structure is moist, but moderately light.
Ready-made muffins can be consumed immediately, or greased with cream or poured over with melted chocolate. It will also be beautiful to decorate them with almond petals or sprinkle with powdered sugar. This recipe doesn't have to bake small muffins. You can use one large silicone mold or mold with removable sides. But then you will have to increase the baking time to about 40 minutes.

Ingredients:
- Milk - 100 ml
- Baking soda - 0.5 tsp
- Eggs - 3 pcs.
- Honey - 3 tablespoons
- Flour - 200 g
- Vegetable oil - 50 ml
- Cottage cheese - 150 g
- Raisins - 50 g
- Salt - a pinch
Step by step preparation of cottage cheese and honey cakes, recipe with photo:
1. Pour the contents of the eggs into a large deep container.
2. Beat the eggs with a mixer at high speed until an airy, lemon-colored foam forms and the mass doubles in volume.
3. Add vegetable oil with milk to the eggs and mix everything with a mixer.
4. Put cottage cheese to the products. Use it with moderate moisture and medium graininess. The fat content of the cottage cheese is not important, it only affects the calorie content of the baked goods.
5. Then add honey and mix everything again until smooth. If the honey is very thick, then first melt it in a water bath, but do not bring it to a boil.
6. Add finely sieved flour to the food to enrich it with oxygen and soften the baked goods.
7. Then add baking soda and a pinch of salt. Spray baking soda over the entire dough so that it is well evenly distributed and does not remain in one lump somewhere in the dough.
8. Pour the raisins with boiling water and leave for 5-7 minutes to swell and become soft. Then dry it well with a paper towel.
9. Add the raisins to the dough and stir to distribute the berries evenly throughout the dough.
10. Divide the dough into portioned molds, filling them in 2/3 parts, because the dough will increase in volume during baking. If the molds are iron, then grease them with any fat, silicone and paper molds do not need to be lubricated.
11. Place the muffins in a preheated oven to 180 degrees for 45 minutes. Bake them until they are nicely golden brown. Check readiness by piercing a wooden splinter. It must be dry without sticking. If the dough sticks to the stick, bake the cottage cheese-honey muffins for another 5 minutes and remove the sample again.
