Many housewives are probably familiar with the recipe for canned cucumbers with chili ketchup. This tasty and savory snack is a great preparation for the winter. But I just thought, why not close the zucchini in the same way? In terms of taste (especially pickled), these vegetables are very similar: they are just as crispy and appetizing. And the answer came by itself: zucchini with chili ketchup for the winter is exactly what you should try! Through a series of experiments, I came to the ideal result for my taste and I am sharing this recipe with you!

Ingredients:

  • Zucchini - 3–3, 5 kg
  • Chili ketchup - 250 g
  • Salt - 2 tbsp. l.
  • Sugar - 1 tbsp.
  • Vinegar - 1 tbsp
  • Water - 6 tbsp.
  • Spices (garlic, dill, laurel, black pepper)

My zucchini, we cut off the tails on both sides. If there are any unattractive spots on the peel, we also cut them off. For canning, we choose young vegetables with not yet formed seeds and tender pulp. I want to say right away that 3–3, 5 kg of zucchini is enough to fill 5 liter jars. At the bottom of each jar we put everything as usual: garlic, dill or parsley, lavrushka, black peppercorns. If you want to enhance the effect, you can toss in hot peppers. Do not overdo it: cut the pepper pod into rings and add 2-3, no more.

Cut the zucchini into rings or half rings and place them tightly in jars.

Cooking the red marinade. In a saucepan, mix the ketchup, water, salt, sugar and vinegar. Stir, bring to a boil and remove.

Pour zucchini with hot marinade and cover with lids. We place the jars in a large saucepan, not forgetting to lay a kitchen towel on the bottom so that the glass does not burst. Fill with warm water so that the cans are 3/4 in water (if there is more, then when boiling, water can be poured into the cans), light the fire. From the moment of boiling, we sterilize in this way for 10 minutes.

We roll up the jars and wrap them up. Leave to cool.
