Kutya consists of three essential components: wheat, poppy and honey. However, depending on the region, it is prepared in different ways. Wheat in Christmas kutia is often replaced with any other cereal: barley, rice, oats. Nuts, steamed raisins, candied fruits, a lot of all kinds of dried fruits and even chocolate are added to the porridge. Kutia for Christmas - cooking secrets
- Sort out the grain base for kutya by sorting out the spoiled grains.
- Wash the selected grains well and cover with clean cold water. Leave to swell for 3 to 24 hours. This is to make the cereal crumbly.
- For cooking wheat groats, the following ratio is taken: 1 part by volume of dry cereal to 3 parts by volume of water. If you use rice, for one part of dry rice - 1.5 parts of water.

- Dried fruits for kutya can be as follows: raisins, cherries, prunes, dried apricots, dates, figs. They should first be soaked in water or uzvar, and to make the dish tasty, add honey.
- Kutya nuts are used fried and crushed: walnuts, almonds, hazelnuts, cashews.

- Water - 3 l
- Milk - 1 tbsp.

Cooking barley grits with poppy seeds:
- Rinse the barley, cover with water and boil over moderate heat, skimming off the foam.
- When the cereal begins to secrete mucus, drain the excess water, transfer the porridge to another bowl, pour in the milk and continue to cook until tender, stirring occasionally.
- Fill the poppy with boiling water and leave for 5 minutes. Then drain the water and grind the steamed poppy in a mortar or twist through a meat grinder.

Ingredients:
- Wheat - 1 tbsp.
- Water - 3 tbsp.
- Salt - a pinch
- Poppy - 3 tablespoons
- Raisins - 3 tablespoons
- Honey - 1-2 tablespoons
- Walnuts - 50 g
- Uzvar or dried fruit compote - 150 ml
Cooking rich wheat kutia:
- Rinse the wheat and soak in cold water overnight to swell and soften the grain. This will shorten the cooking process.
- Put the swollen wheat grains in a saucepan with a thick bottom, cover with clean cold water, boil and remove all the foam.
- Add a pinch of salt, stir and simmer, uncovered, for 1 hour until the beans are soft. If liquid remains after cooking, drain it.
- Soak the poppy with boiling water for 30 minutes, drain the water and grind with sugar in a mortar or interrupt in a blender.
- Pour boiling water over the raisins so that the berries become soft, and squeeze out excess liquid.
- Peel and chop the nuts with a knife or roll with a rolling pin.
- Dissolve honey in a warm uzvar and pour it into the cooled wheat porridge. Stir and let sit for 10 minutes to nourish the liquid.
