New Year is one of the most beloved holidays. We prepare for this celebration in advance, decorate the house, buy food and make a menu. However, when we are engaged in the selection of different dishes, we forget about sweets. Therefore, today I propose a recipe for New Year's cookies. Although it is New Year's only because the cookie cutters have a New Year's shape: Christmas trees, bells, stars, little men, snowflakes, cones, houses, animals, etc. If you do not have such special forms, make them from scrap materials. For example, cut out a stencil from cardboard, which you place on the dough and cut out cookies from it. This, of course, will complicate the task a little, but you will get New Year's cookies.
In addition to the interesting form related to the symbolism of the holiday, it also differs from other baking options, with a fabulous aroma and spicy taste. Therefore, you can put a variety of spices in the dough for flavor. These can be the following spices: cloves, cinnamon, ginger, turmeric, allspice, cardamom, etc.
Such cookies can be used to decorate the New Year tree, presented as a gift to family and friends, folding the products into a beautiful box. And if you try to paint it beautifully with glaze or just sprinkle it with various confectionery additives, then the products will be very bright and festive. Although without intricate design, thanks to the taste and aroma, they will already create a festive mood.

Ingredients:
- Flour - 300 g
- Eggs - 1 pc.
- Any aromatic spices to taste
- Salt - a pinch
- Dark chocolate - for glaze
- Butter - 200 g
- Sugar - 50 g
- Baking soda - 1 tsp
Step-by-step preparation of New Year's shortbread cookies, recipe with photo:
1. Place chunks of cold butter in a food processor. Add eggs next.
2. Add flour, baking soda, salt, sugar and any aromatic spices.
3. Close the bowl with a lid and place it on the appliance. Knead an elastic dough that does not stick to your hands.
4. Remove the dough from the food processor, wrap your hands around and shape into comfortable balls. If you don't have a food processor, knead the dough with your hands. But do this process quickly so the butter doesn't melt.
5. Wrap the dough in a bag and refrigerate for one hour or in the freezer for half an hour.
6. After removing the dough from the bag, place it on parchment and roll it out with a rolling pin. Adjust the thickness of the dough yourself, depending on what kind of cookie you want to get. If you roll out the dough thinner, then the cookies will be crispy, slightly thicker - soft.
7. Place the molds on top of the dough.
8. Squeeze out the dough with them.
9. Remove excess dough.
10. If you want to decorate the Christmas tree with cookies, make a hole in the cookies and pass a string through it. You can use a cocktail straw for this.
11. Transfer the cookies to a baking sheet and place in a preheated oven to 180 degrees for 10-15 minutes. The thinner it is, the faster it will bake.
12. To cover it with icing, melt the chocolate in a water bath or microwave.
13. Using a silicone brush, brush the cookies with the chocolate icing and refrigerate.
