- For self-preparation of noodles, you will need well-sifted buckwheat flour or buckwheat ground into flour. Also, in the process of kneading the dough, 1/3 of the amount of buckwheat is added - wheat, otherwise the dough will not knead. And in some regions of China, seaweed or green tea is added to the noodles.
- This product is very versatile. It can be consumed in any form: hot and cold, make a side dish and main course, add to salads and soups, boil and fry, serve with sauce and seafood. However, the most appetizing and delicious noodles are cooked without additives. It should be remembered that noodles are fragile, so they need to be cooked with care.
- Buckwheat noodles look like a thin and long straw, with a peculiar gray-brown tint and a soft wonderful taste.
- It is brewed differently than classic pasta, but rather quickly. If after boiling soba, it is planned to fry it with other products, then the noodles are cooked for no more than a minute. In addition, if you plan to serve soba with vegetables or meat, then you can boil it in meat, chicken or vegetable broth. Then the noodles will come out much tastier and more aromatic.
- Soba should be stored in a clean and dry container, sprinkled with wheat flour, and no more than a week. When self-cooking buckwheat noodles, you can add soy or rice flour instead of wheat flour. These flours are not used in China, but the noodles are guaranteed to work out and will last longer, up to 3-4 weeks.
- If purchased noodles are prepared, then you should follow the instructions for its preparation. As farmed soba is produced, algae or cornstarch can be added to alter the cooking time of the noodles.
- To make the noodles crispy, they are fried in oil in a pan. Thus, soba is used as a side dish or snack for beer.
- You can serve buckwheat noodles with any vegetables. Soba will be delicious with carrots, onions, fresh cucumbers, radishes, sauteed tomatoes, sunflower and pumpkin seeds, sesame seeds, flax seeds, etc.

- Soba buckwheat noodles - half package
- Onion - 1 pc.
- Carrots - 1 pc.
- Celery stalk - 1 pc.
- Green beans - 3 handfuls
- Bulgarian pepper - 1 pc.
- Ground paprika - 1 tsp
- Soy sauce - 3 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Chili pepper - 1/2 tsp
- Salt and pepper to taste
Step by step cooking:
- Cut onions, celery, carrots and peppers into long thin strips.
- In a skillet, fry the vegetables until the onions are transparent, about 5 minutes.
- Combine fried vegetables and frozen beans. Season with salt and pepper.
- Pour in some water, cover and simmer over low heat for 10 minutes.
- For dressing, combine soy sauce, lemon juice, olive oil and chili. Whisk the products until smooth.
- Cook the soba according to the instructions on the package. Usually the cooking time is 7-10 minutes in salted water. Do not salt the water too much, because the dressing is prepared on the basis of soy sauce.
- Combine noodles with vegetables, top with dressing and stir.
Buckwheat noodles with vegetables
In the Chinese wok, you can cook a variety of dishes with an oriental flavor. In this case, the cooking process will take only a few minutes, because in a wok, food is prepared very quickly.
Ingredients:
- Buckwheat noodles - 1 pack
- Beef - 300 g
- Garlic - 2-3 cloves
- Carrots - 1 pc.
- Onions - 1 pc.
- Green beans - 200 g
- Chili pepper - 1 pc.
- Bulgarian pepper - 2 pcs.
- Salt, pepper - to taste
- Vegetable oil - for frying
Step by step cooking:
- Peel the beef from veins and film, cut into thin strips with a sharp knife and marinate in any marinade, for example, in soy sauce with lemon and olive oil.
- Cut the peeled garlic in half, onion - in half rings, peppers - in thin strips, carrots - grate for Korean carrots.
- Boil the noodles according to the instructions on the package, put them in a colander and let the liquid drain.
- Pour refined vegetable oil into a wok and heat. Put the garlic in the oil and fry for 2 minutes, then discard the garlic. Add the meat to the wok and grill the food over high heat, stirring occasionally, until the beef is cooked through. Put the finished meat on a plate.
- Pour some oil in a wok, heat and put onions, chili and carrots. Fry the vegetables for a few minutes.
- Add green beans and peppers. Season with salt and pepper. Continue stirring the vegetables, stirring occasionally.
- Add meat to vegetables and heat. Put the buckwheat noodles with vegetables and beef on a dish and serve immediately.
Buckwheat noodles with chicken
Sobu with chicken turns out to be no less delicious than the previous recipes. In addition, the poultry can be replaced with other meats to taste.
Ingredients:
- Soba - 200 g
- Teriyaki sauce - 2 tablespoons
- Tomatoes - 2 pcs.
- Coconut milk - 2 tablespoons
- Garlic - 2 cloves
- Chicken fillet - 2 pcs.
- Champignons - 150 g
- Celery stalks - 2 pcs.
Step by step cooking:
- Boil buckwheat noodles according to the instructions. Place it on a slotted spoon and dry it.
- Pour some water into a frying pan and keep on high heat. Reduce heat to medium and add chopped garlic.
- After a couple of minutes, toss in the chicken fillet, washed and cut into small pieces. Cook the meat for 7 minutes.
- Wash the celery, dry it, chop it finely enough and put it in the pan. Cook without a lid for 5 minutes.
- Add prepared chopped mushrooms and tomatoes. Continue cooking for 5-7 minutes, uncovered.
- Add noodles to the food, reduce the temperature, add Teriyaki sauce and cook for 4-5 minutes. Then pour in the coconut milk, stir and serve the food to the table.
Buckwheat noodles with chicken and vegetables
This recipe is intended for the lazy and those who, after a hard day's work, do not want to be at the stove for a long time.
Ingredients:
- Sobu - 400 g
- Chicken - 300-400 g
- Bulgarian pepper - 1 pc.
- Oyster mushrooms - 200 g
- Soy sauce - 2-3 tablespoons
- Peking cabbage - 300 g
- Sesame oil - for frying
- Ginger root - 2 cm
- Salt to taste
Step by step cooking:
- First of all, boil the noodles strictly according to the instructions.
- Meanwhile, cut the chicken fillet into small slices and marinate for a few minutes in soy sauce and finely grated ginger.
- Peel the bell pepper from the seeds with partitions and cut into strips. Wash the oyster mushrooms, dry and also cut.
- Fry the products in a hot skillet in sesame oil.
- Add fillets to the pan, cover and simmer for 10-15 minutes.
- Throw the noodles in a colander and add to the pan with the chicken and vegetables. Season with salt, stir and simmer, covered, for 10-15 minutes.
