Ingredients:
- Duck in pieces - 0.5 carcasses
- Ground black pepper - a pinch
- Dried orange peel - 1 tsp
- Vegetable oil - for frying
- Sweet and spicy ketchup - 2 tablespoons
- Onions - 1 pc.
- Plum sauce - 3-4 tablespoons
- Salt - 1 tsp or to taste
Step by step cooking duck in sweet and sour orange sauce, recipe with photo:
1. Wash the pieces of duck under running water and dry with a paper towel. If you have a whole carcass, then wash it first and cut it into pieces. Pour vegetable oil into the pan and heat it well. Place the pieces of poultry in the skillet so that they fit in one layer. Fry the poultry over a little over medium heat until golden brown on all sides.
2. Peel the onions, wash, chop into thin quarter rings and send to the poultry pan. Reduce heat to medium and continue to fry until the onions are translucent.
3. Add plum sauce, hot and sweet ketchup, dried orange zest, salt and black pepper to the skillet. Add any spices and seasonings as desired.
4. Stir food and bring to a boil. Cover the pan with a lid, turn the heat to the minimum setting and simmer the duck in sweet and sour orange sauce for 1.5 hours. Although, the longer you cook it, the softer the meat will turn out. To keep the meat from the bones, simmer the bird for 2-2.5 hours. Serve it hot with any side dish, pouring over the sauce in which it was stewed.
