1. Using a scraper, clean the fish from the scales in the direction from the tail to the head. Then cut off the fins and rip open the belly from which to remove the entrails.
2. Cut off the head and tail from the carcass and rinse the fish under running cold water, having thoroughly cleaned the inside of the abdomen from the black film. It is not necessary to trim the head and tail. If the whole carcass fits in the cooking container, you can leave them alone. But then be sure to remove the gills and cut out the eyes. Since it is from these parts that the fish begins to rot.
3. Put prepared fish in a colander or sieve.
4. Lightly season the crucian carp with salt. If you wish, you can pepper it and flavor it with fish seasoning.
5. Place the fish colander in a pot of boiling water. When doing this, make sure that the water does not come into contact with the colander. The colander should be slightly smaller in volume than the saucepan.
6. Cover the fish with a lid and cook on the stove over medium heat over a steam bath for about 20 minutes.
7. Serve the cooked steam carp hot after cooking. Drizzle with lemon juice, garnish with fresh herbs and serve with any side dish.
