If you love pancakes with meat, then this recipe is a must try. But if the usual stuffed pancakes are cooked with fried minced meat, then Ukrainian Benredics cook with raw minced meat, and then they fry the pancakes stuffed in batter over low heat.

Ingredients:
- Milk - 900 ml (for pancake dough)
- Flour - 400 g (for pancake dough)
- Eggs - 2 pcs. (for pancake dough)
- Vegetable oil - 3 tbsp. l. (for pancake dough)
- Salt - a pinch (for pancake dough)
- Minced meat - 500 g (for filling)
- Onions - 200 g (for filling)
- Dill - 1 bunch (for filling)
- Eggs - 2 pcs. (for batter)
- Vegetable oil 50 ml (for frying)
Step-by-step cooking of Ukrainian benderiks with meat - recipe and photo
1. Of course, let's cook pancakes first. Beat eggs until froth, add some milk. Sift all the flour into the dough and mix well so that there are no lumps. Then add the rest of the milk. To make the pancakes with holes, add a pinch of baking soda and extinguish it with lemon juice. Stir again and let the pancake dough rest. Pancakes can be fried after 15–20 minutes. Let's prepare the filling. Scroll the meat through a meat grinder twice. Either chop the onion very finely or pass it through a meat grinder as well. Add chopped greens to the minced meat. Add salt and pepper to your taste.
2. Knead the minced meat well. You can beat it off a little so that it becomes as homogeneous as possible. For juiciness, add 2-3 tbsp to the minced meat. l. ice water. But this is only if the minced meat is not liquid.
3. Place prepared pancakes in a stack and cut in half. Place 1 tbsp on the edge of the pancake. l. minced meat.
4. Wrap the pancake so that you get a triangle.
5. Wrap all pancakes this way. If you are going to freeze them, place the pancakes in one layer on a board or tray. After two to three hours, you can put the pancakes in a bag. They won't stick together anymore.
6. Beat two eggs for batter with a little water. Salt the batter. Dip the pancake in an egg and send it to the pan with vegetable oil.
8. Fry benderiki over low heat for 5 minutes on each side.
Put the finished benderiki on a paper towel so that it absorbs excess fat, then serve. Bon Appetit.
