This is a dietary, healthy and easy food for the body, so it is suitable for a dietary and children's table.
Rabbit meat tastes very tender, juicy and tasty. The recipe is suitable not only for everyday meals, but also worthily decorate any festive table. In addition, you can not cook anything for a side dish, because the meat will already be with green beans. But if this dish is not enough for you, then the dish can be supplemented with other stewed vegetables, such as zucchini, tomatoes or bell peppers. Or additionally boil porridge, rice or pasta.

- Rabbit - 300 g of meat
- Vegetable oil - for frying
- Green beans - 300 g
- Spices, herbs and herbs to taste
- Ground black pepper - pinch or to taste
- Salt - 1 tsp or to taste
- Eggs - 1 pc.
Step by step cooking rabbit with green beans:
1. Only part of the rabbit is needed for the recipe. You can cut off any of the parts from it and use it for this dish. But fillet is best suited here, it is the most tender, soft and dietary. Other parts will do, but then you will need to remove the meat from the bones. However, keep in mind that the front legs contain muscles and tendons, and there is not much meat in them and it is tougher. There is a lot of meat on the hind legs and it is softer. The central piece of rabbit is tender, but is more suitable for first courses.
So, first, take the rabbit apart. It is better not to cut it, because when breaking, bones are severely crushed. And if this happens, try to carefully select all the small fragments from the meat. Cut off excess fat from the carcass (you can use it when frying meat). Separate the hind and front legs along the joints. They can be further divided into parts. Separate the fillets along the ribs and back. Remove the kidneys, liver, lung and heart from the carcass. You can cook soup from offal. Divide the carcass in half along the lower back. Divide the back of the rabbit into 3 or more pieces. Select the pieces for the recipe and freeze the rest. I cooked two dishes at once, so I took more meat than indicated in the recipe.
Wash the selected pieces, put them in a saucepan, fill them with water and place them on the stove. After boiling, skim off the foam, season with salt and black pepper, cover and simmer until tender, about 1 hour.
2. Then remove the meat from the broth. Free the cooled rabbit from the bones and cut into medium oblong slices. Do not pour out the broth, but use it to prepare the first course.
3. Wash the asparagus beans under running water and put them in a saucepan with boiling salted water. Although it is not necessary to add salt when boiling beans, especially if this liquid is going to be used in the future in vegetable "mixes" (sauté, stew).
Bring the beans to a re-boil and simmer over medium heat for up to 5 minutes. Don't overcook it. Remove the sample, if the beans are soft but still slightly crispy, then they are ready.
If you don't care about the color of the beans, just tip them over in a colander to drain all the water. To preserve their natural vibrant green color, drain the hot water and soak the beans in cold water for 2-3 minutes. Then cut off the ends on both sides and cut the beans into 2-3 pieces.
You can use frozen beans, but the cooking time remains the same.
4. Pour vegetable oil into a frying pan and heat. Send boiled and chopped meat into it. Stir and sauté over medium heat for 5 minutes until the slices are slightly golden.
5. Add the asparagus beans to the skillet and stir.
6. Season with black pepper, your favorite spices and salt if necessary. I added dried rosemary, it goes well with rabbit meat. Stir and heat to warm up the beans after cooling.
7. Add a raw egg to the skillet.
8. And immediately stir quickly so that the egg mass envelops all the food and coagulates. As this happens, literally 1 minute, remove the pan from the heat. Braised rabbit with asparagus beans is considered ready. If you wish, you can supplement the dish with any finely chopped fresh herbs. Or sprinkle with sesame seeds on a plate. The dish can be served hot or chilled.
