How to cook pork ears?
Pig ears are thoroughly washed beforehand. Then they are fired over an open fire (for example, a gas burner) to scorch the remaining hair. Then, with a knife or an iron scraper, they are thoroughly cleaned in the ear canals and again washed well.
Then the ears are poured with cold water, brought to a boil over high heat, the fire is reduced to a minimum, fat and foam are carefully removed and the ears are boiled, about 30 minutes. After the water changes, favorite spices are added to the pan (onions, bay leaves, parsley root, clove buds, allspice peas, fennel seeds, coriander, caraway seeds, etc.) and the ears continue to simmer for another 1.5 hours. 30 minutes before the end of cooking, the broth is salted and peppery. The prepared ears are used as intended, and the broth can be used to make soup.

- Pork ears - 2 pcs.

- Vinegar - 1 tablespoon

- Ground black pepper - to taste

Cooking pork ears marinated in lemon juice
1. Wash pork ears, process and boil according to the technology described above. When the ears are boiling, add onions, bay leaves, allspice peas, salt and black pepper to the pan.
2. Remove the finished ears from the broth and cool completely. Next, cut into short, thin strips and place in a pickling container.
3. Prepare the marinade. To do this, mix the juice of half one lemon, vinegar, soy sauce, ground nutmeg and garlic squeezed through a press in a saucepan.
4. Pour the prepared marinade sauce over the ears.
