- Pancakes with onion … To prepare such pancakes, take 200 g of onion-batuna (you can mix it with other herbs, for example, dill or parsley, if you like them), 10 peeled walnuts, 2 tablespoons of mayonnaise, the same amount of vegetable oil, two glasses of kefir, a table a spoonful of sugar, a third of a teaspoon of salt, baking soda on the tip of a knife, two boiled eggs, flour, as indicated below. Grind greens and eggs, break nuts, three or process in a mortar. Mix the ingredients with butter and mayonnaise - this will be the "filling" for the pancakes. Next, we prepare the dough from kefir, soda, sugar, salt, adding so much flour to get the consistency of thick sour cream (depending on the fat content and density of kefir, milk, yogurt that you have chosen). Preheat a frying pan, pour in vegetable oil, put the dough on it, forming circles. When they are browned on one side, put the filling on them and turn them over, "baking" the contents and bringing the dish to readiness.
- Rice casserole with tomatoes and cheese … To prepare this dish, we need a deep frying pan or a heavy-walled saucepan, suitable for both baking and searing. Next, take 500 g of green onion, cut into pieces and lightly fry in olive oil, add 250 g of boiled rice, salt and spices to taste, finely chopped tomatoes. We turn on the oven for heating. Pour the contents of the pan with a mixture of a glass of milk and three broken eggs (beat well beforehand), sprinkle the casserole with hard grated cheese on top. Bake until the crust is golden brown.
- Diet salad with batun onions … Finely chop 200 g of onions, you can mix with other herbs. On a grater, three any green apples (2-3 pcs.), Add crushed nuts to taste, instead of butter, fill the salad with fresh apple or apricot juice (2 tablespoons).
- Boiled onion stew … Before preparing the onion with the sauce, cut the greens into 3-4 cm pieces and boil them in water for about 10 minutes, with the addition of salt and lemon juice (so that the liquid is slightly sour). Then they are thrown into a colander, allowed to drain, doused in flour and fried until light golden brown. Fried or boiled onions (and it can be used anyway), served with a special sauce. For him, a tablespoon of flour is fried in the same amount of butter, adding a spoonful of tomato puree and a couple of mashed chives. If the sauce is too thick (depending on the tomato paste, mashed potatoes, ketchup or the tomatoes taken), you can add water at your discretion.
- Onion sauce … This dressing goes especially well with fish. Cut off a hump from 100 g of fresh white bread, soak it in milk and rub it through a sieve. Next, add two yolks from boiled eggs, one raw yolk, 3 tablespoons of vegetable oil, 100 g of green onions, a tablespoon of lemon juice, salt, pepper, spices as desired. Thoroughly grind the contents in a blender until pasty, after which the sauce is ready.
- Canning and storing for the winter … It is convenient to close various salads from onion-batuna in jars, for example, with peppers, tomatoes, cucumbers or other vegetables, simply adding it to the recipe - summer preservation will obviously not get any worse from this. An interesting opportunity to keep the onion out of season, actively used in cooking, is the preparation of a preservative mixture from finely chopped (or mashed in a blender) onion, vegetable oil and salt, mixed until a homogeneous consistency. This formulation must be refrigerated and can be added to a variety of dishes for flavor. About 250 g of salt is consumed per kilogram of onion, the oil is ignited and poured so that it covers the contents by half a centimeter. Banks are pre-sterilized.
