Chicken broth is cooked in different ways, however, the discrepancies depend on the details, and not the cooking technology. It can be cooked "on different substances", namely: from a whole chicken carcass, its individual parts or giblets. In any case, it will turn out to be nutritious, satisfying and aromatic. He will instantly give you a good mood and instantly put you on your feet after colds. Although in good health, few people would refuse a cup of delicious broth.
Chicken broth is versatile. It is good both in a pure stand-alone form and as a base for a wide variety of dishes. It is used as a base for soups, stews, sauces, rice, risotto … It is not difficult to prepare, however, to get transparent and rich, several rules should be taken into account.
- The most delicious broth, cooked on a soup-laying chicken, i.e. not a meat breed.
- Take an older chicken, 2-4 years old. This will make the broth rich and aromatic, because can be cooked for hours and not boiled.
- Watch the foam separating while boiling the broth. Remove it in a timely manner. Then the broth will be beautiful and transparent. For the same reason, do not boil too much.
- Cook the broth over very low heat so that there are occasional bubbling bubbles on the surface. Then it will be transparent and clean like a tear.
- Add vegetables from the roots for aroma and taste when cooking the broth: onions, carrots, celery stalks, garlic. Throw them away after boiling.
- To give the broth a pleasant, slightly golden hue, place some onion husks in a saucepan.
- Salt the broth when the meat begins to separate from the bone.
- If the water boils away, you can add boiling water.
- Do not overdo it with aromatic spices, they will overpower the natural aroma and flavor of the chicken.

- Any part of chicken - 500 g
- Garlic - 1 clove
- Salt - 1 tsp or to taste
- Carnation - 2 buds
- Allspice peas - 3 peas
- Bay leaf - 2 pcs.

Step by step cooking chicken broth, recipe with photo:
1. Pour drinking water into a pot.
2. Place bay leaves, peppercorns and cloves. Optionally, you can omit the onion and carrots.
3. Place the saucepan on the stove and bring to a boil.
4. In the meantime, cut the chicken, select those parts from which you will cook the broth. Wash the meat and pat dry with a paper towel.
5. Dip the chicken into the boiling broth. If you need to get juicy meat, then immerse it in boiling water, if the goal is to get a rich broth, then put the chicken in cold water.
6. Place a lid on the saucepan and bring to a boil. Remove the lid, remove the foam with a slotted spoon, screw the temperature down to the minimum and cook the broth for 1.5-2 hours. Season with salt and pepper half an hour before the end of cooking. Remove the meat from the finished broth and put it on a plate. Strain the broth into a separate container and pour into bowls. Place finely chopped chicken in each serving, sprinkle with chopped herbs and serve.
