Gnocchi is an Italian popular dish where it is traditionally prepared exclusively on Thursdays. They are brothers not only of lazy dumplings, but also of Ukrainian dumplings, Belarusian dumplings, Italian ravioli, Czech dumplings. Most often, gnocchi is made from potatoes, flour, semolina, bread crumbs, ricotta, and of course from cottage cheese. Interestingly, they can be served as a first and second course. They can be accompanied by tomato sauce or pesto sauce. They can be present in meat stews or gnocchi simply poured over with melted butter.
Curd gnocchi is very simple and quick to prepare. This delicious dish can be prepared even when there is no time or desire to be in the kitchen. These gnocchi can be made not only sweet, but also salty. For example, with spinach, green onions, dill and other herbs. They can be served with aromatic tomato sauce and basil. The potato dumplings are seasoned with bolognese sauce and generously sprinkled with grated cheese.
This recipe suggests making sweet gnocchi, with the addition of apricots, which can be replaced with any fruits and berries of your choice. When serving, sweet dumplings are poured with sour cream, cream, melted honey or butter.

Cooking curd gnocchi
1. Place the curd in a deep container for kneading the dough. It is advisable to choose cottage cheese dry, otherwise you will have to add more flour so that it compensates for the liquid. If you come across wet cottage cheese, then first put it in a sieve or hang it in cheesecloth so that excess serum is glass.
2. Wash the apricots, divide them in half, remove the pits, and cut the pulp into small cubes.
3. Add flour, salt, sugar to the curd, beat in an egg and mix everything well. Then put the apricot pieces and mix all the products until smooth.
4. Then grind the work surface with flour and put the curd on it. Form it into a long sausage with a diameter of 3 cm, which is cut into small pieces about 2-3 cm in size.
5. Place a pot of drinking water on the stove to boil. Then lower the gnocchi to boil, and do not forget to stir them so that they do not stick to the bottom. Dumplings are boiled very quickly, literally 2 minutes. They reach readiness when the gnocchi float to the surface of the pan. Then they must be quickly removed from the pan with a slotted spoon.
Serve ready-made curd gnocchi hot, sprinkled with sour cream or any other sweet jam.
