They are of good quality and suitable for consumption and are considerably less expensive than fillets. Therefore, you can buy such a red fish and salt it at home. Its taste will be no different from an expensive fillet. In addition, you will be sure of the quality of the salting, because make a snack yourself.
It will be possible to use pieces of salted red fish from the ridges in a day. They cook different versions of dishes with them: put on sandwiches with butter and cheese, add to salads and snacks, make canapes and much more. You can also cook cream soups from salted salmon. Ingredients:
- Salmon ridges - 1 pc.
- Salt - 1 tablespoon
- Ground black pepper - 0.5 tsp
- Odorless vegetable oil - 1 tablespoon
- Sugar - 1 tsp
Step-by-step cooking of salted salmon ridges at home, recipe with photo:
1. Wash the backs of salmon under running water and dry with a paper towel. Chop them into pieces of the desired size.
The ridges should ideally be fresh (chilled) or once frozen. Their quality influences the result of the finished dish.
2. Combine sugar with salt and black pepper in a saucepan and stir. Take large kitchen or sea salt without additives. Add all sorts of spices and herbs as desired. They will add a piquant taste and spicy salting to the fish.
3. Rub each piece of fish on both sides with the prepared mixture.
4. Place the salmon ridges in a container and pour over the vegetable oil. The dishes in which the fish were placed must be enameled or glass.
5. Close the fish with a lid and send to the refrigerator to salt for a day. If you want lightly salted fish, cook it for about 15 hours.
6. After a certain time, rinse the salted salmon ridges at home under running cold water, dry with a paper towel and leave on a plank for 15 minutes to dry well. Then remove the meat from the ridges and use the fish delicacy for its intended purpose.
