- Honey mushrooms - 5 kg
- Salt - 200 g
- Garlic - 6-8 cloves

Step-by-step cooking of salted honey agarics for the winter in jars
1. Before salting honey mushrooms for the winter, carefully select the mushrooms, removing damaged and old ones from the total mass. We wash everything under running water, removing leaves and other debris. Put in a saucepan with water on the fire, add 5 g of salt. Next, bring to a boil, remove the foam with a strainer and boil for about 10 minutes.
2. The recipe for salting honey agarics for the winter in jars provides for double heat treatment. Therefore, we drain the first water, fill the mushrooms with clean water again and cook without adding salt and other spices for 20 minutes from the moment of boiling. It does not make sense to boil for a longer time, especially since mushrooms can lose their natural attractiveness due to prolonged heat exposure. Next, drain the contents of the pan through a colander, let the water drain and leave the mushrooms to cool.
3. While the mushrooms are being processed, prepare the required amount of spices. Peel and chop the garlic into slices, break the bay leaf into smaller pieces. We put a small amount of all auxiliary ingredients on the bottom of the container.
4. Before pickling mushrooms in jars for the winter, they should be darkened for several days in an enamel bowl. It is highly undesirable to use aluminum containers. So, we put the mushrooms in layers, sprinkling with spices. You should choose a saucepan of such a size that the total mass of mushrooms does not occupy more than 2/3 of its volume.
5. When all the mushrooms are laid out, a load is applied on top. In this state, mushrooms should stand for about 5 days in a cool place.
6. After 5 days of salting honey agarics for the winter we remove the oppression. We prepare small glass jars and nylon lids, steam sterilize them. We carefully transfer the mushrooms to containers, leaving free space on top by 1-1.5 cm.
