The traditional way to use grape leaves is to make dolma. However, only young leaves are used for this dish, which very quickly become dense, elastic and unsuitable for a dish. In order for dolma to be on the menu all year round, you need to stock up on grape leaves for future use. To do this, they are salted, canned and pickled. In this recipe, we will learn how to freeze them. The workpiece perfectly retains all flavor and texture. Having frozen dolma leaves in stock, you can cook at any time throughout the year.
For freezing, choose only young and fresh leaves collected in early summer from a flowering bush, but before starting to treat them from diseases and pests. The veins have not yet become coarse on them. The size and shape of the leaves should not be jagged. It will be difficult to wrap minced meat in them. Perfect grape leaf - completely covers a medium sized female palm. The leaves should be healthy and bright green. It is desirable to collect them from the bushes of white grape varieties. Dark grape leaves are less suitable for cooking, they are tough and jagged.

1. Sort out the grape leaves by sorting out the spoiled and torn ones. Cut off the ponytails from each leaf.
2. Place the leaves in a sieve.
3. Rinse them well under running water.
4. Transfer the leaves to a deep container and pour boiling water over. Leave it on for 2-3 minutes.
5. Place the leaves on a clean, dry cotton or terrycloth towel. Transfer the leaves with a towel to dry them well and not a drop of water remains on them.
6. Stack 10 leaves on top of each other.
7. Roll the leaves into a tight roll and tie them with any thread to hold well.
8. Wrap rolled grape leaves hermetically with cling film and send to the freezer for storage. Store frozen grape leaves until next harvest. Keep in mind that the frozen leaf is very fragile. Therefore, in order not to damage it, store them in a separate chamber.
