Beetroot is a very popular vegetable in our latitudes. She has excellent taste, a huge amount of nutrients, year-round availability and low price. All these qualities make it in demand among many housewives. Since, among other things, it improves the functioning of the gastrointestinal tract, and goes well with many products: vegetables, fruits, nuts, meat, fish … Today we will talk about how to make a salad with beets, raisins and olive oil.
Beets for the recipe can be used boiled or baked, at the choice of the cook. If you cook it, keep in mind that the cooking time is 30-40 minutes. If the roots are large, the cooking time will increase. Before cooking, the vegetable is washed, dipped in water in a peel and boiled until tender and soft. However, when boiling, beets lose some of their nutrients, so it is better to cook them using baking. To do this, the washed root vegetable is hermetically wrapped in foil or placed in a baking sleeve. Cook it in a preheated oven up to 200 ° C until tender, which can be checked by piercing the vegetable with a toothpick - it should be soft. 1. Prepare the beets in a convenient way for you: boil or bake. Since this process is long, it is better to do this in advance, for example, in the evening. Then cool the root vegetable completely and peel it.
2. Grate the beets on a coarse grater or cut into thin strips.
3. Wash the raisins and steam with boiling water for 5-10 minutes, so that the berries swell and become soft.
4. Place the raisins on a paper towel and dry well.
5. Combine beets with raisins, season with salt and olive oil. Add walnuts if desired, they will harmoniously combine with these products.
