Then you don't want to think about food at all, but we need strength for the whole day. Then okroshka is the real salvation. There is no one basic recipe for it. Each chef and hostess has her own time-tested and favorite recipe. It is prepared with kvass, mineral water, broth, whey, kefir, etc. Today I will share a recipe for a cold soup - okroshka with sausage in water and sour cream. This cold summer soup is prepared very quickly and easily. The technological process is somewhat reminiscent of the preparation of the Olivier salad. But here all prepared products are still filled with a liquid base, from which okroshka turns out to be rich and satisfying. Before starting cooking, I will share some useful cooking tips.
- The most high-calorie okroshka is obtained with mayonnaise. Use low-fat mayonnaise or sour cream to reduce calories.
- Okroshka in mayonnaise is not stored for long, so make it in a small amount.
- You can put the chopped vegetables in a saucepan and keep them in the refrigerator. And before serving, put a portion of vegetables in a plate, season with mayonnaise, mix and dilute with liquid.
- Boil water for okroshka in advance so that it has time to cool in the refrigerator. Instead of boiled water, you can take mineral water.
- If there is no need to limit yourself in food and calories, then in addition to milk sausage, you can add ham or smoked sausage to okroshka.
- The liquid in okroshka should be sour. Citric acid, lemon juice, or vinegar will do this well.
- Cook potatoes for okroshka "in their uniforms" so that they do not boil during cooking.

- Milk sausage - 300 g

- Green onions - bunch
- Eggs - 4 pcs.
- Sour cream - 500 g
- Drinking water - 2 l
Step by step cooking okroshka with sausage in water and sour cream, recipe with photo:
1. Pre-boil the potatoes in their uniforms in lightly salted water. Then cool, peel and cut into cubes, as usual for Olivier salad.
2. Boil eggs hard-boiled for 8 minutes, transfer to ice water and cool. Then peel and cut into pieces like potatoes.
3. Cut the sausage to the same size as the previous products.
4. Wash the cucumbers, dry with a paper towel, cut off the ends and chop.
5. Wash green onions under running water and chop into thin rings.
6. Rinse the dill, dry and chop finely.
7. Place all food in a saucepan and cover with water.
8. Add sour cream, salt and citric acid.
9. Mix the food well and send okroshka with sausage on water and sour cream in the refrigerator to cool for an hour. Then serve it to the table.
