Fritters are pumpkin, apple, meat, carrot, squash, yeast, etc. However, the most popular are potato pancakes. Potato fruits are available at any time of the year. Therefore, many different dishes are prepared from it. It is boiled, fried, mashed potatoes, but excellent tender pancakes are considered one of the most delicious dishes. The main products for them are potatoes, eggs and onions. However, you can increase the range of ingredients and add variety. For example, add flour, twisted meat, mushrooms, all kinds of spices to the minced meat.
As with all dishes, potato pancakes also have some rules. So, potatoes should be used one that is suitable for frying. Fry pancakes immediately after preparing the dough, and in a well-heated frying pan. To avoid browning the potatoes, put grated onions into the dough immediately. You can replace it with a spoonful of sour cream or kefir. If you use flour, then there should not be a lot of it, otherwise the pancakes will be tight. Serve the dish hot, immediately from the pan. Well, if you decide on culinary feats and make pancakes with filling, then fry them under a closed lid, otherwise they may not bake inside.

Cooking potato pancakes
1. Peel potatoes and onions, rinse and dry.
2. Then grate the vegetables. There are two options here. The first is a coarse grater, then the pancakes will be thin, delicate and with crispy edges. The second is a fine grater, the pancakes will come out thicker, softer and with soft edges. Which option is better is up to you. I recommend trying both versions to see which one works best for you, and you can also add the missing garlic cloves to the dough. They will add spicy notes to the dish.
3. Season the minced meat with salt and pepper. Beat in eggs as well.
4. Stir the potato mixture until smooth.
5. Preheat a frying pan with vegetable oil and immediately start frying pancakes, because you cannot leave the grated potatoes, otherwise it will begin to darken. Spoon the dough into the pan with a tablespoon, giving it a neat pancake shape. If the pan is poorly heated, the pancakes will inevitably stick to its surface. Therefore, be sure to monitor the heating temperature.
6. Cook the pancakes for about 5 minutes on one side until golden brown. Then flip it over and fry until golden brown.
7. Place the finished pancakes in a storage container. If they are going to be fried in a lot of oil, then place them on a paper towel so that it absorbs the excess fat.
8. You can eat the dish immediately after cooking with sour cream. But the pancakes will also be good chilled. Alternatively, they can be reheated in the microwave or in a skillet with a closed lid.
