Spicy herring can be prepared from fresh and frozen fish. But in our latitudes, it is almost impossible to find fresh herring, so you can safely take a frozen product. In cooking, there are 6 main GOST bouquets. I preferred to choose one of them, where the mixture includes not only salt, but also black pepper, allspice, bay leaf, cloves, sugar, coriander, dill seeds. But if you want, you can expand this list by adding cardamom, mint leaves, cinnamon, paprika, anise and other spices to taste. You can use a variety of flavoring compositions. For example, sage, cumin, anise, nutmeg are also good for the above spices. The main thing is that all the spices are fresh. Then they will fully give away all the aromatic oils for the spicy herring.
It is also worth noting that the classic way of salting a fish is with a whole uncut carcass. But this way the salting time will be longer. There are also other options for salting: degreased, half-gutted, decapitated, filleted or cut into pieces. Some of these options will significantly shorten the salting time.

How to cook spicy salted herring:
Since we most often use frozen herring for salting, it should first be completely defrosted. You shouldn't use a microwave oven or hot water for this. Thaw fish in the refrigerator. This process may take you a day, but the quality of the carcass will not deteriorate. It is desirable to choose a medium-sized fish, so it will cook faster. In this recipe, I will cook the whole fish, so when it melts, just rinse it under running water and wipe it off with a paper towel. Also, be sure to remove the gills before salting.
1. So, when the fish is fully prepared, select a container in which it will be convenient to salt the fish and put all the spices and spices, salt and sugar in it. It is best to salt the herring in a plastic or enamel bowl.
2. Pour warm drinking water into a container and stir well to completely dissolve the salt and sugar. Then lower the fish into the liquid so that it is all immersed in the brine.
3. Set the oppression on top of the herring, for example, put a plate of the appropriate diameter, on which place a container with water. Leave the fish at room temperature for a day, then put it in the refrigerator for 2 days. After this time, you can try it, the herring will be slightly salted. If you prefer saltier fish, keep it in the brine for 2 more days. Also note that the herring will cook faster at room temperature than in the refrigerator.
When the fish is ready, store it exclusively in the refrigerator. And use it perfectly for any dishes and snacks for which you are used to using a purchased product.
