1. Place the plums in a sieve and rinse under cool running water.
2. Place them on a cotton towel and leave to dry completely.
3. Put dry plums on a baking sheet and send to dry in the oven for 5-6 hours at 60-65 degrees. Turn them over from time to time to dry evenly on all sides. Keep the oven door ajar to allow steam to escape. You can also dry the plum in the sun or in the shade. To do this, lay them out on a wire rack, plywood or cotton fabric. Bring plums out in the sun or shade. Cover the fruit with gauze to keep out gnats and dust. Cook dried pitted plums (plum apricots) for 3-4 days, turning occasionally. Bring drying indoors at night, and take it outside in the morning.
