Due to its taste and healing properties, dried fruit is widely used in cooking in many national cuisines. Prunes are used for the preparation of numerous desserts, salads, added to soups, as a filling in pies, seasoning for meat … Dried fruits diversify the menu and you can enjoy delicious candied fruits throughout the year. This is a good option when you need to find application for a large harvest. In addition, dried products take up little space, and all useful substances are preserved in the drying itself.

To make dried fruits tasty and healthy, you should choose only ripe, undamaged and not rotten sweet plums with juicy and dense pulp. Of the varieties, cherry plum, Hungarian, Renklod are suitable. However, any other variety can be dried as well. You can dry plums in the fresh air, in an electric dryer or oven. In any case, you get tasty and dense dried fruits.

1. Sort all wormy and rotten fruits. To dry, select fruits of about the same size and the same degree of ripeness, so that they cook at the same time and evenly. Wash all fruits well under cold water and pat dry with a paper towel. Cut the fruit in half and remove the seeds. Pitting is optional, though. Plums can be dried whole (including pits) or halves (pitted). However, it is more pleasant to eat prunes when there is no bone in it. But when drying plums with a stone, the composition of the fruit will be more useful, because the bone contains many medicinal substances.

2. Fruits, skin side down, spread on a baking sheet in one layer. Send them to a heated oven at 60 degrees for 10-15 hours, depending on the size of the fruit. Leave the oven door slightly ajar.

Pack dried prunes in cardboard boxes or paper bags and store in a cool, dry place. If the humidity in the storage room is above 70%, then dried plums can become moldy. The shelf life of dried white plums at home is a year. Prunes that have stood for longer lose some of their beneficial properties and become less tasty.

Other drying methods:

  • In the absence of an oven, plums can be dried in an electric dryer. Put the fruits on special trays and load into the dryer, preheating it to 50 degrees. Plums are dried for about 1-2 days, depending on the size and cutting of the fruit.
  • To dry fruits in the sun, place them on a pallet or plywood sheet and expose them to the sun. To protect against insects, tighten the pan with gauze. Bring dried fruits indoors at night, because leaving them outside, dew will wet them in the morning. Drying usually takes a week. Then it is recommended to keep the prunes outside in the shade for several days.
