If you are tired of classic cheesecakes with raisins, I suggest making honey cheesecakes with semolina and orange zest. The main secret of this dish is that curd dough with cereals must be infused so that the semolina swells. Then grains of semolina will not be felt, and otherwise it will grind on your teeth.
Semolina syrniki perfectly keep their shape, do not spread in the pan, they turn out to be airy and fluffy. Cottage cheese in this recipe plays an important role. It should be of moderate humidity. Otherwise, if the product is very wet, then more semolina will have to be added. Then you get not cheese cakes, but manniki. Remove excess moisture from the curd by hanging it in gauze or put it in a colander so that all the whey is glass.
