Step-by-step preparation of apple marshmallow:
1. Wash the apples, dry with a towel, remove the seed box with a special knife and cut into 4-6 pieces. You do not need to peel the peel; for this recipe, you can use any apples, both whole and broken. Only then cut out the damaged areas. The variety of apples is not important, you can use any: sweet, sour, sweet and sour, incl. assorted will do. The choice of apple variety will only affect the sweetness of the marshmallow.
2. Put the prepared apples into a saucepan and place on the stove. Pour in some drinking water to prevent them from burning. If apples are piled up in a mountain, it's okay. They will boil down, soften and become soft.
3. Turn on high heat and boil. Then reduce the temperature, cover the apples and boil them for about 45-50 minutes until they acquire a soft consistency. If the fruit is too hard, you may need more time.
4. Use a blender to beat the apples to make a smooth applesauce.
5. Cover a baking sheet with parchment for baking and line the apple mass so that the layer is no more than 1 cm thick. If the layer is thicker, the pastille will dry for a long time, while the bottom layer will already burn, and the top layer will still be soft.
6. Place the baking sheet in the preheated oven, turning on the heat at 80 degrees. Open the brazier door slightly to let out steam. Dry the pastille for at least 2 hours. When it becomes dense, smooth and does not stick, it means that it is ready. Remove the baking sheet from the oven.
7. Remove the apple layer from the parchment. If it will be difficult to remove, then blot it with a damp hand. Then dry the apple leaf again a little. Using a sharp knife, cut the layer into long plates, fold into a dry glass container and store in a dry place. You can use marshmallow on its own, but it is also well suited for baking and desserts.
