1. Wash, dry and cut the eggplants into bars, cubes or half rings. If you use ripe fruits, then they probably have bitterness. Therefore, sprinkle them with salt and leave for half an hour. When moisture droplets form on the surface of the pieces, rinse the fruits under running water and pat dry with a paper towel. If you have dairy young eggplants, then they do not contain bitterness.
2. Heat vegetable oil in a skillet and add eggplant. Fry them over medium heat until golden brown. Eggplants love oil and absorb it actively. To use less fat, choose a non-stick pan. It requires less oil and the food does not burn.
