Eggplant is an unusual vegetable that goes well with many foods, flavors and seasonings. A huge variety of dishes are prepared from them. Today I present an equally interesting recipe where fried eggplants are in perfect harmony with the taste of fresh apples and fresh summer vegetables. It turns out to be a wonderful salad that will suit both a hearty breakfast and a late dinner for the whole family. You can fill this salad with different dressings. The most common dressing is vegetable oil. But olive oil or a more complex component sauce made from olive oil, mustard, soy sauce, lemon juice is also suitable … Instead of olive and vegetable oils, soy, sesame, pumpkin and other oils can be used with equal success. You can supplement the salad with your favorite greens: parsley, mint, coriander, caraway seeds, basil, arugula, cilantro, dill, etc. Walnuts will also not be superfluous here, they go well with eggplants. Ingredients:
- Eggplant - 1 pc.
- Apple - 1 pc.
- Soy sauce - 1 tablespoon for salad dressing
- White cabbage - 100 g
- Radish - 5-6 pcs.
- Tomatoes - 1 pc.
- Salt - 0.5 tsp or to taste
- Cucumbers - 1 pc.
- Hot pepper - 0.25 pods
- Vegetable oil - for frying eggplant and salad dressing
- Garlic - 1 clove

1. Wash the eggplants, dry with a paper towel and cut into bars, cubes or half rings. Heat vegetable oil in a skillet and add eggplant. Fry them until golden brown on all sides.

- If the eggplants are old, they contain harmful solanine, which makes the dishes bitter. To remove it, sprinkle the sliced fruits with salt and leave for 15-30 minutes. - Eggplant is a dietary food, but it absorbs a lot of fat during the frying process. To prevent this, first soak the fruits in salt water before frying.
