- Minced meat should resemble minced meat for meat cutlets: it should be thick, not runny. Then the cutlets will be lush and juicy.
- To make the minced meat thick, add bread soaked in milk, and then squeezed bread. Its pores will absorb excess moisture.
- The minced meat will also be thicker by adding oatmeal or semolina. The food will swell a little, and the texture of the cutlets will become airy and tender.

1. Wash the liver, dry and cut into pieces for a meat grinder. Remove the film from beef and pork liver. I also recommend soaking pork liver in milk or water to remove bitterness from the product.
Peel the onions, wash and cut into 4-6 pieces.
2. Pass the liver and onions through the auger of a meat grinder with a medium wire rack.
3. Add semolina, salt, black pepper and eggs to the food. You can add different spices and herbs if you like.
4. Stir the minced meat well and leave it to stand for half an hour so that the semolina swells and grows in size, and the minced meat acquires a meat-like consistency.
5. For a steam bath, pour water into a saucepan and boil. Place a colander on top so that it does not come into contact with boiling water.
6. Form a patty and place in a colander.
7. Place the lid on the colander and steam the liver patties for 10 minutes. Cook all patties in the same way. If you have a double boiler, use it for cooking, then the cooking process will go faster.
