Despite the fact that now a huge amount of frozen vegetables is sold in supermarkets, but it is the zucchini that is best frozen at home. They behave quite "well" in freezing. At the same time, all useful properties are preserved in them as much as possible. The technology for freezing them is quite simple. Young zucchini are cut together with the skin into cubes or circles and placed in the freezer in impervious bags.
Unfortunately, during defrosting, the zucchini will lose their taste a little, and, of course, they will be softer than fresh ones. Therefore, they will not be suitable for frying with a crispy crust. But you can still stew them with other vegetables, make mashed potatoes or make caviar. I will share the recipe for the latter today. Since this is the most rational way to revive a vegetable.
The composition of products for the preparation of caviar can be very diverse. Carrots and onions are far from the only vegetables that can be added. Apples, garlic, tomatoes, ginger, sweet and hot peppers, and much more are put here. Today, there are many recipes for making squash caviar, you just need to choose the recipe that you like the most. Well, I think everyone knows about the excellent taste of squash caviar. Delicate, aromatic and appetizing appetizer will perfectly show itself on the everyday and festive table.

Making caviar from frozen zucchini
1. Peel onions and garlic, wash, dry and cut: onion - half rings, garlic - into cubes.
2. Wash the apple, dry it, remove the core with a special knife, and cut the pulp into cubes.
3. Put the frying pan on the stove, pour in the vegetable oil and heat. Add the garlic and onion and sauté over medium heat until golden, about 10 minutes.
4. Then add the frozen zucchini, which should not be defrosted beforehand. zucchini in a pan will thaw on their own.
5. After the zucchini, add the apples to the pan.
6. Set the heat to high to thaw the courgettes and bring them to a boil. Then reduce the temperature to the lowest temperature and add the vegetable seasoning.
7. Add frozen dill and season with salt and pepper.
8. Cover the pan with a lid and simmer the food for about 30 minutes over low heat.
9. Then let the vegetable mass cool slightly and transfer it to the blender bowl.
10. Grind vegetables into a homogeneous consistency and send to the refrigerator to cool. Serve the caviar with fresh bread, boiled potatoes, or any kind of porridge.
It is not at all necessary to grind the zucchini in mashed potatoes, this is a matter of taste, because there are recipes where caviar is cooked in pieces.
