Poultry like chicken, goose, duck, turkey, rooster are quite large individuals for preparing a daily meal. But when a family gathers at one table for some solemn occasion, this dish will be very useful! Today I propose a recipe for the oven: baked fragrant homemade young cockerel with apples.
You can, of course, buy such a bird in a store, but it is better to choose at the market from rural farmers. Rooster meat itself is much more sinewy and tougher than that of domestic chicken. That is why it must be cooked a little longer, while it is better to pre-marinate the bird for a day or two. And the dish turns out to be especially soft, tender and tasty if it is baked with vegetables.
You can stuff a bird with any food. For example, cereals, mushrooms, vegetables and fruits. In this recipe, I suggest filling it with apples, but the dish will be no less tasty with other products. After trying several options, you will choose the one that works best for you.

Ingredients:
- Domestic young rooster - 1 pc.
- Apples - 2-3 pcs. (depending on size)
- Mayonnaise - 3-4 tablespoons
- Soy sauce - 2 tablespoons
- Salt - 1 tsp
- Ground black pepper - a pinch
- Ground paprika - 0.5 tsp
- Ground nutmeg - 0.5 tsp
- Seasoning "khmeli-suneli" - 0.5 tsp.
Cooking baked rooster with apples
1. Prepare the marinade in a small container. To do this, combine mayonnaise, soy sauce, ground pepper and spices: suneli hops, nutmeg and paprika.
2. Stir the sauce well to distribute the food evenly.
3. Wash the rooster under running water, remove feathers and black tan, if any. Also gut the insides. Wipe off with a dry cloth and brush with marinade on all sides and inside.
4. Place the bird on a comfortable surface and wrap with cling film. Leave it to marinate for a day in the refrigerator, but you can keep it for more time, then the meat will be softer. However, if you don't have time to wait that long, leave the bird to marinate at room temperature for 2-3 hours.
5. When the rooster is ready to roast, wash and dry the apples. Remove the core with a special knife and cut the fruit into 2-4 pieces. Although if the apples are small, then they can be laid in the bird as a whole.
6. Stuff the cock with apples.
7. Wrap the carcass with a baking sleeve, place on a baking sheet, which is sent to the oven at 200 ° C for about 1.5 hours. The specific roasting time depends on the size of the rooster. Usually the time is calculated as follows: for 1 kg of meat - 45 minutes of cooking, plus 25 minutes for the whole carcass for browning.
8. Put the finished rooster on a serving dish and serve.
