The meat of domestic pigs is often no longer an additional element, but the basis of everyday meals. It is used for cooking kebabs, cutlets, chops. Pork is boiled, baked, fried, broths and much more. In this review, we'll talk about how to deliciously cook the lower part of the shank (ham) - the shank.
This pork leg leg is especially popular in Germany, the Czech Republic and Holland. But lately, our hostesses also prefer to cook it. Moreover, there are already a lot of cooking variations, and one of them is pork knuckle baked in the oven in lemon sauce. This part of the carcass has a soft and juicy structure, it turns out to be very tender and satisfying. Such a dish will be a great decoration for both a festive and everyday table. In this case, the knuckle is most often used together with the skin, because it contains a huge army of valuable trace elements and vitamins.
For a dish to be a tremendous success, you must first choose the right shank. Buy it from the back of the pig's leg, because it contains more meat and less fat. Examine the structure of the meat at the cut: there should be no chapped areas on them. Also, press firmly on the pork with your finger: if the surface quickly returned to its original position, the product is of high quality. The color of the ham should not be dark. Buy meat with white fat. Well, of course, the smell! It should be pleasant and slightly sweet.

Ingredients:
- Pork knuckle - 1 pc.
- Mayonnaise - 150 g
- Mustard - 1 tsp
- Lemon - 0.5 pcs.
- Soy sauce - 3 tablespoons
- Garlic - 2 cloves
- Salt - 1 tsp or to taste
- Ground black pepper - pinch or to taste
- Any spices and spices to taste
Step by step cooking pork shank in lemon sauce
1. Put mayonnaise, mustard and soy sauce into a pickling container.
2. Stir the food well to distribute it evenly.
3. Peel the garlic and finely chop it. You can put it through the press. Add garlic to the sauce.
4. Wash the lemon, cut it in half and squeeze the juice from the half into the sauce. Add salt, ground pepper and your favorite spices. Stir the food well.
5. Scrape the pork knuckle with an iron washcloth to remove black tan, if any. Rinse under running water and wipe dry with a paper towel. Use a sharp long knife to make deep punctures in it. Through them, the marinade will get into the inside of the shank. Spread the marinade on all sides of the meat and leave to marinate for 2 hours. But you can withstand the leg longer, for example, at night.
6. After this time, place the shank in a baking sleeve or wrap with cling foil. Place on a baking sheet and send to bake in an oven heated to 200 ° C for 2 hours.
7. If you want the meat to be browned, then 20 minutes before cooking, unfold it from the foil or cut the sleeve. Serve the shank hot. Although chilled, it will also be delicious. For example, it can be used in the form of boiled pork, spreading it on a slice of bread.
