You can prepare a vegetable dish quickly and without much effort. To do this, it is enough to chop the selected vegetables, fry, combine and stew. And if you mix them, put them in an airtight bag and send them for storage in the freezer, then you can feast on them all year round. From a huge selection of vegetables, today we will make a spicy dish - stewed eggplant with asparagus.
Asparagus is known for its original taste, richness of nutrients and beneficial trace elements. It goes well with many products. Green beans, also called asparagus beans, are a wonderful green vegetable widely used in cooking around the world. Eggplants are equally healthy and popular. They are used in any form: fried, baked, stewed … Recipes with them are common in many cuisines of the world. By combining these products, you get an amazingly tasty dish, which, in addition, is also very simple and quick to prepare. This vegetable dish can be served as a side dish or as a vegetarian snack. It is ideal with boiled chicken breast, fish steak, baked turkey, etc.

Ingredients:
- Asparagus beans - 400 g
- Salt - 0.5 tsp or to taste
- Dill - a few twigs
- Ground black pepper - a pinch
- Vegetable oil - for frying
- Eggplant - 1 pc.
- Parsley - a few twigs
Step by step cooking of stewed eggplant with asparagus, recipe with photo:
1. Wash and dry the eggplants with a paper towel. Cut them into medium-sized bars. Use young fruits, then you don't have to remove the bitterness from them, which is inherent in old fruits. If the eggplants are ripe, sprinkle them with salt and leave for half an hour, then rinse under running water. This action will remove a specific bitterness from them.
2. In a skillet, heat the vegetable oil and send the eggplants.
3. Fry the eggplants over medium heat until golden brown. Frying over such a heat will prevent fat from penetrating into the vegetable, which the eggplant likes to actively absorb.
4. Wash the asparagus, put in a saucepan and cover with drinking water. For cooking, you can use any varieties of green beans, the main thing is that they are at the stage of milk ripeness, i.e., without beans in the middle of the pods.
5. After boiling, boil the asparagus for 5 minutes and turn it over in a colander to drain all the water.
6. Cut off the ends of the asparagus and cut it into 2-3 pieces.
7. Send the asparagus to the eggplant pan.
8. Next add chopped parsley with dill to the vegetables. Season vegetables with salt and black pepper.
9. Stir the eggplant with the asparagus and simmer over medium heat, covered for 5-7 minutes.
