Asparagus beans, or as they say, are green beans, an excellent green vegetable. However, she is not a very frequent guest at our tables. Moreover, all over the world, especially in European countries, it is widely used in cooking. To diversify the usual menu, I propose a simple and tasty step-by-step recipe that definitely deserves special attention - stewed asparagus beans with zucchini, carrots and onions.
Young green beans cook quickly. In addition, it is sold fresh frozen in supermarkets and is available all year round. However, the frozen product does not provide such a tasty and aromatic broth that is so valuable. But all the same, the food turns out to be delicious.
This vegetable crop goes well with various vegetables, grains and meats. Therefore, asparagus is considered a real assistant to an inexperienced cook. In this recipe, asparagus beans are combined with courgettes, carrots and onions. But the set of vegetables can be diversified by adding others to taste and desire.

Ingredients:
- Asparagus beans - 250 g
- Salt - to taste or 1 tsp
- Carrots - 1 pc.
- Zucchini - 1 pc.
- Basil - a few twigs
- Ground black pepper - a pinch
- Parsley - a few twigs
- Onions - 1 pc.
- Vegetable oil - for frying
Step by step cooking of stewed asparagus beans with zucchini, carrots and onions, recipe with photo:
1. Wash the zucchini, dry it with a paper towel, cut off the tip on one side, and the stalk on the other. Then cut the zucchini into strips or any other convenient shape. But since the asparagus beans are long, the dish will look beautiful when all the products are of the same shape.
2. Peel vegetables: peel onions, peel carrots. Wash the root vegetables and cut: carrots into strips, onions in half rings.
3. Pour a small amount of vegetable oil into the pan and heat well. Then send the onions and carrots to the skillet.
4. Set to medium heat and fry vegetables, stirring occasionally, until golden brown. Carrots absorb oil very strongly, so add oil if necessary.
7. In another skillet, heat the oil well and add the zucchini.
8. Turn on medium heat and fry the fruit until a beautiful golden brown crust appears.
9. Simultaneously with frying vegetables, add water to a saucepan, salt and bring to a boil. Wash, dry and dip the asparagus beans in a saucepan. Bring to a boil, turn the heat to medium and cook for 4-5 minutes. Do not digest it for longer, otherwise it will lose some of its nutrients.
10. Put the finished asparagus on a sieve and let the liquid glass. Then place it on a board. Cut off the ends on both sides, and cut the pod into 2-3 parts, depending on the size. The optimal length of asparagus is 2-3 cm.
Asparagus beans can be boiled, chopped and refrigerated for up to 3 days. And when it will be necessary to use it in any dishes.
Note: This recipe uses green asparagus. However, there are several varieties of it. Often on sale you can find a plant of white and purple hues. White asparagus is harvested from mid-March to June. Purple is considered the rarest variety and has a bitter taste, and after cooking it loses its unusual pigment and turns green. Green asparagus is available all year round.
11. Put boiled asparagus in a pan with fried zucchini.

13. Wash basil and parsley greens, dry, finely chop and send to the pan with vegetables.
14. Season all products with salt and black pepper and stir. Place the lid on the skillet, set the heat to slow, and simmer the asparagus beans with courgettes, carrots and onions for 10 minutes. If desired, season the dish with spices and herbs to taste, and sesame seeds will give it a special charm.
