Lamb is a hearty and healthy meat. It is prepared for every day and for festive feasts. The meat is tender, soft and melts in the mouth, especially if it's leg of lamb. This is a gorgeous festive dish that will decorate any feast, incl. and the New Year's table, because it looks very solemn! A leg of lamb is being prepared in the oven, of course, for a long time, but without unnecessary hassle and preliminary long-term manipulations. The most important thing is to choose the right meat. the taste of the finished dish depends on it.
You need to choose the meat of a young ram and not a fat tail, which does not have an unpleasant smell. Such meat bakes well, smells good and easily separates from the bone. With prolonged simmering of meat in the oven in its own juice and sauce, a large piece turns into such tender meat that it leaves the bone on its own and practically disintegrates into pieces. This oven-baked lamb leg will become an exemplary festive dish.

Ingredients:
- Leg of lamb - 1 pc.
- Soy sauce - 3 tablespoons
- Ground black pepper - a pinch
- Spices and herbs to taste
- Salt - 1 tsp
- Mustard - 1 tsp
- Lemon - 0.5 pcs.
Step by step cooking of baked lamb leg, recipe with photo:
1. Pour the soy sauce into a small container.
2. Add mustard to the soy sauce, which can be not only cooked, but also dry or French grainy.
3. Add lemon juice to the food.
4. Stir the marinade well.
5. Add salt, black pepper and any spices to the marinade. I preferred adding nutmeg. Be careful with the addition of salt, as the marinade contains soy sauce, which is already salty.
6. Wash the leg of lamb, dry it with a paper towel and place on a baking sheet.
7. Spread the marinade well on both sides of the leg of lamb and leave to marinate for 2 hours at room temperature, but you can keep it longer. If you marinate overnight, then put the lamb in the refrigerator.
8. Then wrap the baking sheet with foil and place the leg of lamb in the oven at 180 degrees. Bake it for 2, 5 hours. Remove the foil half an hour before the end of cooking so that the baked leg of lamb is browned and golden brown. You can serve it to the table as a hot dish for any side dish, but it is also delicious as a cut after cooling.
